Spicy Italian Sausage Sandwiches Recipe: How to Make It image

16 Italian sausage links (4 ounces each)
1 each medium green, sweet red, yellow and orange peppers, julienned
1 banana pepper, julienned optional
1 onion, halved and sliced
2 tablespoons canola oil
8 brat or hot dog buns, split

Steps:

  • In a large skillet, cook sausages over medium heat until no longer pink. Meanwhile, in another large skillet, saute peppers and onion in oil. Drain sausages; place a sausage in each bun. Top each with about 1/3 cup pepper mixture. Refrigerate remaining sausages.

Number Of Ingredients 15

1 ounce unsliced Italian or French bread (about 16x4 inches) or 6 individual French rolls
1 pound extra-lean ground pork or beef
1 cup sliced fresh mushrooms
¾ cup chopped onion
½ cup chopped green sweet pepper
1 clove garlic, minced
1 - 2 dried red chili peppers, crushed
1 teaspoon paprika
½ teaspoon dried thyme, crushed
½ teaspoon fennel seed, crushed
¼ teaspoon salt
? teaspoon ground black pepper
1 8 ounce can low-sodium tomato sauce*
2 tablespoons grated Parmesan cheese
¾ cup shredded reduced-fat mozzarella cheese (3 ounces)

Steps:

  • Split bread loaf in half horizontally. Hollow out bottom half of the loaf, leaving about 1-inch shell. (If using individual rolls, hollow them out slightly.) Set aside. (Reserve the bread pieces from inside of the loaf for another use, such as bread crumbs.)
  • In a large skillet cook pork or beef, mushrooms, onion, sweet pepper, and garlic until no pink remains in pork. Drain well. Stir in the red chili peppers, paprika, thyme, fennel seed, salt, and black pepper. Stir in the tomato sauce. Heat to boiling; reduce heat. Cover and simmer for 10 minutes. Stir in Parmesan cheese.
  • Spoon meat mixture into the bottom half of the bread loaf or rolls. Sprinkle mozzarella cheese over the meat mixture; cover with loaf or roll top(s). Place sandwich in a shallow baking pan or on a baking sheet. cover tightly with foil and bake in a 375 degree F oven for 15 to 20 minutes or until cheese melts and sandwich is hot. (For smaller sandwiches, wrap each in foil and place on a baking sheet or in a shallow baking pan. Bake in a 300 degree F oven for 10 minutes to warm.)
  • To serve the large sandwich, use a serrated knife to slice the loaf crosswise into 6 portions. Makes 6 main-dish servings.
