100g sweet potato noodles
1 cucumber (julienned, optional)
½ cup Korean pickled radish (thinly sliced, optional)
½ cup lettuce or cabbage (thinly sliced, optional)
2 hard-boiled eggs
Sesame seeds (for garnish)
2-3 tbsp Korean chilli paste (gochujang)
½-1 tbsp Korean chilli powder (gochugaru)
2 tbsp sugar
1 tbsp soy sauce
1½-2 tbsp brown rice vinegar
¼ cup blended onion
¼ cup blended apple
1 tbsp sesame oil
1 cup well fermented kimchi (chopped)

Steps:

  • To Prep Mix all the Sauce ingredients together in a bowl. Set aside. To Cook Cook sweet potato noodles in boiling water for about 2-3 mins or according to packet instructions. When it is al dente, drain noodles in a colander and rinse with cold water until the noodles have completely cooled. Drain well. In a serving bowl, place the noodles, top with sauce, sliced cucumber, pickled radish, lettuce/cabbage and hard-boiled egg. Garnish with sesame seeds and serve.

I make this quite often. We love it; it has the right amount of spiciness, and you can adjust the spiciness to fit your tastes. We also use this sauce as a dip for spring rolls or egg rolls, or as a sauce for broccoli or other stir fried Asian vegetables.

1/3 cup soy sauce
1/2 teaspoon molasses
1/4 cup sesame oil
1/4 cup tahini
1/4 cup brown sugar
1 tablespoon chili oil
3 tablespoons balsamic vinegar or 3 tablespoons red wine vinegar
1/2 bunch sliced green onion
salt
1/2 lb soba noodles (Japanese -Buckwheat noodles)

Steps:

  • Heat soy sauce until reduced by half.
  • Turn to low and add molasses.
  • Warm briefly and transfer to bowl.
  • Add remaining ingredients except noodles.
  • Add salt to taste.
  • Boil noodles about 3 minutes.
  • Drain and plunge in ice water.
  • Drain and rinse.
  • Combine with sauce and chill.
