These spicy sliders are perfect in the summer when you are tired of the usual grilling fare! Serve with lettuce, tomato, and spicy ranch dressing.

Number Of Ingredients 12

1 pound ground chicken
1 pound ground pork
2 tablespoons chopped jalapeno peppers
2 tablespoons chopped fresh cilantro
1 tablespoon chopped garlic
1 tablespoon soy sauce
2 tablespoons olive oil, or as needed
salt and ground black pepper to taste
12 slider-sized burger buns
½ cup ranch dressing
¼ cup mayonnaise
2 tablespoons spicy salsa

Steps:

  • Combine chicken, pork, jalapeno peppers, cilantro, garlic, and soy sauce in a bowl. Mix well and form into 12 small patties. Place on a platter and brush with olive oil. Sprinkle with salt and pepper.
  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Place patties on the grill and cook, covered, until browned, 3 to 4 minutes per side. Do not press down. Place patties inside slider buns.
  • Mix ranch dressing, mayonnaise, and salsa together to make spicy ranch dressing. Serve alongside sliders.

1 Whole Chicken
2 tablespoon Killer Hogs Hot BBQ Rub
1 package Hawaiian Roll
to taste Dill Pickle
2 cup Mayonnaise
1/4 cup Apple Cider Vinegar
1 1/2 tablespoon Granulated Sugar
1 tablespoon Ground Black Pepper
1/2 tablespoon Granulated Garlic
1 teaspoon Kosher Salt
1/2 teaspoon Crushed Red Pepper Flakes
1/2 teaspoon Ground White Pepper
1/4 teaspoon Cayenne Pepper
1 Lemon
1 Red Onion
1 1/2 cup Apple Cider Vinegar
1 tablespoon Granulated Sugar
1/2 teaspoon Kosher Salt
1 pinch Crushed Red Pepper Flakes
as needed Vegetable Oil Cooking Spray

Steps:

  • To make the spicy white sauce combine Mayonnaise (2 cup), Apple Cider Vinegar (1/4 cup), Granulated Sugar (1 1/2 tablespoon), Ground Black Pepper (1 tablespoon), Granulated Garlic (1/2 tablespoon), Kosher Salt (1 teaspoon), Crushed Red Pepper Flakes (1/2 teaspoon), Ground White Pepper (1/2 teaspoon), Cayenne Pepper (1/4 teaspoon) and juice from the Lemon (1) in a large bowl and whisk. Refrigerate for 2 hours before serving. Sauce will keep up to 1 week in the refrigerator.
  • To make the pickled red onion bring Apple Cider Vinegar (1 1/2 cup) to a boil in a small pot over medium heat. Add Granulated Sugar (1 tablespoon), Kosher Salt (1/2 teaspoon) and Crushed Red Pepper Flakes (1 pinch) stir to dissolve sugar. Remove from heat and add Red Onion (1). Toss to combine and place in a heat safe container to pickle. Place in refrigerator for 3-4 hours. Pickled Onions will keep for up to a week in the refrigerator.
  • Remove Whole Chicken (1) from packaging. Check cavity for giblets and trim excess fat. Pat chicken dry with paper towel.
  • Spray the outer skin with Vegetable Oil Cooking Spray (as needed). Season well with Killer Hogs Hot BBQ Rub (2 tablespoon).
  • Prepare pellet smoker or other grill/smoker for indirect cooking at 350 degrees F (175 degrees C) using pecan pellets/wood for flavor.
  • Place chicken on cooking rack and cook until internal temperature reaches 165 degrees F (73 degrees C) in the breast.
  • Remove chicken from grill and rest loosely covered with aluminum foil for 20 minutes.
  • Pull chicken into bite size pieces discarding the bones.
  • To make the sliders: Place a couple Dill Pickle (to taste) slices on the bottom portion of the Hawaiian Roll (1 package). Top with Pulled Chicken and Spicy White Sauce. Add a few pickled red onion slices and the top roll and serve.
