1 tablespoon(s) prepared mayonnaise
1 teaspoon(s) dijon mustard
1 teaspoon(s) freshly ground pepper
1 teaspoon(s) pureed canned chipotles
1 teaspoon(s) worcestershire sauce
1 tablespoon(s) fresh lime juice
- few drops of hot pepper sauce
1 teaspoon(s) capers
5 - anchovy fillets
8 clove(s) garlic
1 cup(s) olive oil, extra virgin
2 tablespoon(s) red wine vinegar
- salt and freshly ground pepper
24 - romaine leaves
2 ounce(s) parmesan cheese, shaved
- baked or grilled croutons

Steps:

  • Put all ingredients, except the oil and vinegar, in a food processor and process until blended. Slowly mix in the oil, then mix in the vinegar. if too thick, add a little water. drizzle romaine with the dressing and garnish with shaved cheese and croutons.

1 egg yolk (optional)
1 tablespoon garlic, minced
2 teaspoons Dijon mustard
2 anchovy fillets, minced
1 1/2 teaspoons pepper, coarsely ground
1/4 teaspoon salt
1/2 teaspoon coriander, ground
1/2 teaspoon cumin, ground
1 teaspoon Worcestershire sauce
2 teaspoons water, cold
1/2 cup olive oil, extra virgin
1/2 cup canola oil
1 1/2 tablespoons sambal chili paste (Thai chili paste available at Asian markets)
1/2 lemon, juiced
1/2 lime, juiced
3 tablespoons parmesan cheese, freshly grated

Steps:

  • Combine yolk, garlic, mustard, anchovies, pepper, salt, coriander, cumin, worcestershire sauce and water in a food processor. Process until smooth. With motor running, pour oils in a slow, steady stream into dressing mixture. When all oil has been incorporated, add chili paste, lemon juice, lime juice, and parmesan cheese. Process until smooth.
