Spiced Beef with Dumplings is the perfect comfort dish for the whole family.

Number Of Ingredients 20

2 1/2 - 3 pounds beef shank (cut into cubes or small pieces)
1 lime (to clean meat)
3 medium tomatoes (peeled and seeds removed)
2 medium onion (sliced)
2 medium leeks (chopped finely)
2 large carrots (sliced)
1 red sweet pepper (sliced)
1 green sweet pepper (sliced)
3 garlic cloves (crushed)
Juice of 1 lime
1 bouquet garni (parsley, thyme and bay leaf)
2 whole cloves
1 teaspoon coriander (dry preferably)
1 hot pepper (scotch bonnet or habanero)
salt and pepper (to taste)
1 1/4 cups flour
2 whole eggs (at room temperature)
2 egg yolks
1/4 cup butter
Salt and pepper

Steps:

  • Cut the meat into medium to large cubes and clean by rubbing/squeezing the lime onto each cube. Rinse with water and place meat into a large saucepan and cover generously with cold water and bring to a boil. Skim off the froth. Add onions, leeks, carrots, bouquet garni, cloves, coriander, 2 cloves of garlic and 1 hot pepper. Add salt and pepper to taste and simmer for 1 1/2 hours.
  • Prepare the dumplings. Mix the ingredients until a dough is formed. Leave aside for 20 minutes.
  • Chop the remaining onions, peel and remove the seeds from the sweet peppers, then cook together in oil until brown. Add tomatoes. Season and allow to simmer. Form small balls from the dough and roll in flour. When the meat is cooked, sieve the sauce through a strainer. Cook the dumplings in this broth. Arrange meat on a serving plate. Add the vegetables and dumplings. Sprinkle with juice from 1 lime.

I've never found a recipe for crispy ginger beef like the ones in the restaurants. I have experimented, and found something pretty close. Serve with rice and some steamed veggies.

¼ cup cornstarch
¼ tablespoon salt
black pepper
12 ounces flank steak, thinly sliced
1 quart oil for frying
4 tablespoons soy sauce
1 tablespoon rice vinegar
½ tablespoon rice wine
1?½ tablespoons honey
7 tablespoons granulated sugar
½ tablespoon chile paste
¼ cup water
3 tablespoons chopped fresh ginger root
1 tablespoon vegetable oil
2 cloves garlic, chopped
¼ cup sliced onion
¼ cup diced red bell pepper

Steps:

  • Heat oil in deep-fryer to 375 degrees F (190 degrees C).
  • Meanwhile, in a mixing bowl, combine cornstarch, salt and pepper together. Mix thoroughly. Toss the steak slices in the cornstarch mixture and coat well.
  • Deep fry the coated steak slices until golden brown. Check to make sure they are cooked through. Remove from oil, and set aside.
  • In another mixing bowl, combine the soy sauce, rice vinegar, rice wine and honey. Add sugar, chili paste, water, and ginger. Mix well and set aside.
  • Heat a wok or deep frying pan over medium high heat. Add 1 tablespoon of oil, and quickly saute the onion, garlic and red pepper for 30 seconds. Add the sauce mixture, and cook another 30 seconds. Finally, add the strips of fried steak and toss to heat through and coat with sauce.
