1/2 cup soy sauce
1/4 cup red wine vinegar
2 tablespoons honey
2 tablespoons olive oil
4 garlic cloves, minced
2 tablespoons minced fresh peeled ginger
1 1/2 teaspoons crushed red pepper flakes
1/4 teaspoon black pepper
4 lbs chicken wings, tips removed

Steps:

  • In a medium sized bowl, whisk together soy sauce, vinegar, honey, oil, garlic, red pepper flakes and black pepper.
  • Add chicken wings and turn to coat.
  • Marinate covered in refrigerator 2 hours or overnight.
  • Heat oven to 450°F.
  • Place wings on rack in broiler pan.
  • Roast for 30 minutes.
  • To crisp skin if desired,increase oven temperate to broil.
  • Broil wings for 1-2 minutes or until skin is crisp.

30g Bamboo shoots
50 grams Lotus root
20 grams Crab Mushroom
30g Enoki mushroom
20 grams Winter melon
10gram green pepper
30g Fish Ball
20 grams fish tofu
20 grams Cauliflower
30g Dried chili
10gram ginger
10gram shallot
10gram garlic
10ml Cooking wine
2 grams salt
20 grams celery
5 grams White pepper
10gram Pork liver (broiled)
5 grams Cooked Sesame
5 grams parsley
100ml Spiced oil
50 ml Hot pot bottom material
60 grams Doubanjiang (spicy oil)

Steps:

  • Wash the shrimp, remove the yarn from the back, marinate with cooking wine, salt and white pepper, set aside
  • Shred green pepper, peel and cut winter melon into thick slices, blanch enoki and crab mushrooms in water, set aside
  • Boiled pork liver slices, lotus root slices, spring bamboo shoots cut into sections, blanched and set aside
  • Fish balls, shiitake mushroom balls, fish tofu, Xia Mi dumplings were taken out of the refrigerator and defrosted slightly at room temperature
  • Wash cauliflower and celery, cut into pieces, blanch for later use
