ORANGE SPICE CAKE RECIPE: HOW TO MAKE IT

- In a bowl, combine the flour, sugar, baking soda, ginger, cinnamon and cloves. Combine the orange juice, molasses, oil and egg; add to dry ingredients and stir just until combined. Pour into a greased 9-in. square baking pan., Bake at 350° for 16-20 minutes or until a toothpick inserted in the center comes out clean. Spoon marmalade over warm cake. Cool on a wire rack. Serve with whipped topping if desired.

Steps:
- Preheat oven to 350 degreees.
- Spray a non-stick 9-inch square baking pan with cooking spray, set aside.
- Combine flour, sugar, baking soda, ginger, cinnamon and cloves.
- Combine organge juice, molasses/sorghum, orange zest, orange extract, oil and egg; add to dry ingredients and stir until moistened.
- Pour into prepared pan and bake for 16-20 minutes.
- Spoon marmalade over warm cake.
- Cool on a wire rack.
- Serve garnished with whipped topping and orange slices.

- Preheat oven to 350 degrees F. Butter an 8-inch cake plate and set aside. In a small bowl mix together all ingredients for the spiced oranges. Strain and store in the refrigerator until ready to serve. Save the juice of the spiced oranges for the cake. In a large bowl combine flour, baking soda and baking powder. Using your stand mixer, beat butter and sugar until creamy. Add the egg and milk until well incorporated, then gradually add the dry ingredients until the batter becomes smooth and thick. Lastly, fold in the strained juice of the spiced oranges. Smooth batter into the cake plate and evenly top with crumble. You may have some leftover which is always perfect to use for morning muffins or another cake. Just store the leftover crumble in an air tight container. Bake for about 35 minutes or until the cake tester comes out clean. Transfer to a wire rack and let cool completely. In a small bowl whisk confectioner’s sugar and milk until a nice thick glaze forms. Drizzle this over the cake and let set. Serve with chilled oranges and of course, enjoy.

- I got this recipe from a coworker about 25 years ago. She was of Italian-American background and referred to it as Italian Orange Spice Cake. Use 9x13S pan. Grease it and dust it with flour. Preheat oven to 350. Blend oil and lowfat milk. Beat in Large eggs and beat till well blended. Mix the sugars and add in the egg mix. Combine all dry ingredients before adding to sugar mix. Mix well. Last add in nuts and liquid flavorings. Bake for 25-30 min at 350. Don't overbake as it will dry out. ORANGE ICING: Mix together in order given. Spread on cake after it is cold. /CAKES

Put the fruit, orange juice and zest, Cointreau and vanilla into a large non-metallic bowl. Mix, then cover with clingfilm and leave to soak for at least 24hr or for up to two days.
Preheat the oven to 150°C (130°C fan) mark 2. Grease and line the base and sides of a 20.5cm (8in) deep round cake tin with baking parchment.
Put butter and sugar into a large mixing bowl and beat with a handheld electric whisk for 2-3min until light and creamy. Gradually whisk in the beaten eggs, adding a little of the flour if the mixture starts to curdle. Fold in the remaining flour, cocoa powder, cinnamon, cloves and mixed spice.
