This recipe calls for heating the liqueur to hasten the maceration time, and further impregnate the cherries with booze.

Yield About 1 quart

Number Of Ingredients 6

1 cup sugar
2 whole cloves
1 2-inch piece cinnamon stick
4 cardamom pods
1 quart sweet cherries, stemmed and pitted
1/2 cup Cognac or other aged brandy

Steps:

  • In a small saucepan, combine sugar and spices with a cup of water. Bring to a simmer, stirring until sugar dissolves. Let simmer for 5 minutes.
  • Turn off heat and add cherries and brandy to pot. Let cool, then store mixture in a jar in refrigerator for at least 2 days before eating, and up to several months. These are great over ice cream.

Here's a version of a recipe my mom used to make! Over the years I've cut back on the amount of spices but still enjoy the combination, whether over ice cream, pound cake, fruitcake, pancakes and even some meats! At times I've even jazzed it up a little with a bit of cherry flavoring, if you know what I mean!

Number Of Ingredients 9

1 (16 ounce) bag frozen pitted tart cherries, thawed
1 cup light corn syrup
1/3 cup water
1/2 cup sugar
3 tablespoons lemon juice
1/8 teaspoon ground allspice
1/8 teaspoon ground cloves
1/8 teaspoon ground cinnamon
1 dash salt

Steps:

  • Except for the cherries, combine all ingredients in a saucepan & bring to boil.
  • Reduce heat & simmer 15 minutes, stirring frequently.
  • Remove from heat & stir in cherries.
  • Cool before serving.

  • Put vinegar, cinnamon, allspice berries, orange zest and juice into a pan and bring to the boil. Boil for 4-5 minutes, strain and set aside to cool.

    Transfer cooled vinegar mix to a clean saucepan, add cherries and slowly bring to a simmer. Simmer over a very gentle heat for 10-15 minutes until cherries are just tender. Remove cherries with a slotted spoon and pack into warm, sterilised jars.

    Add sugar to spiced vinegar and return to heat. Stir until sugar dissolves then cook for a few more minutes until mixture has reduced and thickened a little. Remove from heat, add herbs and stir then stand for 5 minutes to infuse the flavour.

    Pour hot, spiced syrup over cherries. Seal immediately, using vinegar-proof lids. Store jars in a cool, dark place.

    Pickled cherries are best stored for 6-8 weeks before eating.

The recipe calls for a rolled boneless pork loin roast—two pieces of pork tenderloin that come packaged together. You can ask your butcher to tie them together with butcher's twine or do it yourself, tying the knots at one-inch intervals until the roast is completely tied. In the original recipe, we plated the pork with lemon wedges and ruffles of purple kale. Nowadays, kale has transformed from a garnish to a trendy salad ingredient, but we still think a bit of greenery is always a nice touch, especially around the holidays.
