My mom and I have been baking these for as long as I can remember. They are delectable butter-type cookies served as favors at traditional Mexican weddings. They also make a wonderful addition to any Christmas goodie platter.

Yield 3 dozen, 36 serving(s)

Number Of Ingredients 7

1 cup butter, softened
1/2 cup powdered sugar
1 teaspoon vanilla
2 1/4 cups sifted flour
1/4 teaspoon salt
3/4 cup chopped walnuts or 3/4 cup pecans
powdered sugar (for rolling baked cookies in)

Steps:

  • Cream together butter and powdered sugar until light and fluffy; stir in vanilla.
  • Whisk together flour and salt; add gradually to butter mixture; stir in chopped nuts.
  • Chill dough if it seems too soft.
  • Form dough into 1 1/4" balls and place onto parchment-lined or ungreased baking sheets.
  • Bake at 400° for 10-12 minutes or just until the cookies start to turn light golden-brown; remove from oven and allow to cool slightly; while cookies are still warm (but NOT hot) remove them from baking sheets and roll, a few at a time, in powdered sugar until evenly coated; cool cookies completely on wire racks.
  • Cookies may (optionally) be rolled in powdered sugar a second time once cooled to room temperature.
  • NOTE: Forming dough into 1" balls will increase yield to 48 cookies.

Do you remember? The A&P grocery store and the famous SPANISH BAR CAKE? The Great American Tea Co. was founded in 1859. Later the name changed to A&P. In 1937 A&P published The Womans Day magazine! From 1972to1974, 800 hundred stores were closed Then in 1979 A&P was sold. If you miss the cake here it is. I have baked this cake years ago. It is loaded with raisins, spices, walnuts etc.Now I would like to share this famous cake with you.I remember going to the A&P in the early 40s for mom. When all the food & owner was behind the counter. He would take our order and even and even bag it!

1-1/2 cup(s) sugar
1-1/2 teaspoon(s) baking soda
1 tablespoon(s) cocoa powder
1 teaspoon(s) cinnamon
1 teaspoon(s) salt
1 teaspoon(s) nutmeg
1 teaspoon(s) allspice, ground
1/2 cup(s) vegetable oil
2 cup(s) applesauce
2 medium eggs...slightly beaten
1 cup(s) raisins.....plump them in warm water,drain and use. .(add these last, after everything else is mixed)

8 ounce(s) cream cheese ...softened
4 tablespoon(s) butter, softened
2 teaspoon(s) vanilla extract
1-1/2 cup(s) confections sugar
1/3 cup(s) milk
1 tablespoon(s) lemon juice, fresh
- walnuts are an option...your choice

Steps:

  • Gather your spices and the other ingredients together. In a large bowl, mix flour, sugar and baking soda. Then add the cocoa,cinnamon,salt,nutmeg and allspice. Mix well.
  • Next add the vegetable oil,applesauce,and the beaten eggs. When all of the above is mixed, Add the plumped raisins. Put in a greased and floured 9x13 cake pan. Bake at 350 degrees for 30to35 minutes In a pre-heated oven.
  • FROSTING: Mix the cream cheese,butter,vanilla, confectioners sugar, milk and lemon juice together. Spread on the cake ****YOUR OPTION: To make a layer cake, just like the original Spanish Bar Cake (see main foto) cut the cake into 2 pieces, then spread the frosting between the layers and on the top. Step back in time and enjoy this great cake!
