Roasted Spaghetti Squash is so versatile and easy to make! Here is a basic recipe.

1 large ripe spaghetti squash
salt and fresh pepper (to taste)

Steps:

  • Preheat oven to 350°F.
  • Cut the squash in half lengthwise, scoop out the seeds and fibers with a spoon.
  • Place on a baking sheet, cut side up and sprinkle with salt and pepper.
  • Bake at 350° about 1 hour or until the skin gives easily under pressure and the inside is tender. Remove from oven and let it cool 10 minutes.
  • Using a fork, scrape out the squash flesh a little at a time. It will separate into spaghetti-like strands.
  • Place in a serving dish and serve hot.

Number Of Ingredients 10

1 medium spaghetti squash, (about 2 1/2 pounds), halved and seeds removed*
1 Tablespoon olive oil
1 teaspoon salt
1/2 teaspoon pepper
2 ounces cream cheese, softened to room temperature
2 Tablespoons unsalted butter, softened to room temperature
3 cloves garlic
1 Tablespoon Italian seasoning
3/4 cup shredded mozzarella cheese*
1/4 cup shredded parmesan cheese

Steps:

  • Brush the inside of each squash half with olive oil. Season each with salt and pepper. Place the squash halves cut side up in the air fryer basket.
  • Air fry at 360 degrees for 22-28 minutes, or until the squash is fork tender.
  • While the squash is cooking, make the cheesy topping. Using a fork mash together the cream cheese, butter, garlic, and Italian seasoning. Stir in the mozzarella and parmesan cheese.
  • Once the spaghetti squash is done, spread the topping evenly on top of each half.
  • Air fry at 400 degrees for 2-3 minutes or until the cheese has melted.
  • Use a fork to scrape and fluff the “spaghetti” strands until the cheese topping is well incorporated. Serve in the skin as a boat or remove and transfer it to a bowl.
