Serve these garlicky, spicy meatballs with steamed sugar snap peas and two cups cooked rice tossed with 1 tablespoon chile paste—you'll find it on the ethnic aisle of most supermarkets or at Asian grocers.

? cup minced green onions
2 tablespoons brown sugar
3 tablespoons lower-sodium soy sauce
2 tablespoons dark sesame oil
1 tablespoon chile paste (such as sambal oelek)
¼ teaspoon salt
6 garlic cloves, finely minced
1 pound ground sirloin
Cooking spray

Steps:

  • Preheat the oven to 400°.
  • Combine first 7 ingredients in a large bowl. Add beef; mix gently to combine. With moist hands, shape beef mixture into 20 (1 1/2-inch) meatballs.
  • Heat a large cast-iron skillet over medium-high heat. Add half of the meatballs to pan; cook 4 minutes, turning to brown meatballs on all sides. Arrange browned meatballs in a single layer on a jelly-roll pan coated with cooking spray. Repeat procedure with remaining meatballs. Bake meatballs at 400° for 7 minutes or until done.

1 egg
1/4 cup finely chopped onion
1 tablespoon ketchup
1-1/2 teaspoons salt
1/2 teaspoon pepper
1/2 teaspoon seasoned salt
1/2 teaspoon Worcestershire sauce
2 pounds ground beef
3/4 cup dry bread crumbs
SAUCE:
2 tablespoons plus 1-1/2 teaspoons cornstarch
1 cup orange marmalade
3 to 4 tablespoons soy sauce
2 tablespoons lemon juice
2 garlic cloves, minced

Steps:

  • In a large bowl, combine the first seven ingredients. Crumble beef over mixture. Sprinkle with bread crumbs; mix gently. Shape into 1-in. balls. , Place meatballs on a greased rack in a shallow baking pan. Bake, uncovered, at 350° for 20-25 minutes or until meat is no longer pink; drain. , Meanwhile, in a small saucepan, combine the sauce ingredients. Bring to a boil; cook and stir for 2 minutes or until thickened. Transfer meatballs to a serving dish; serve with sauce.

Turn the heat down to medium and cover with a lid. Cook for 3-4 minutes or until the meatballs are cooked through. Remove from heat. Top the cabbages leaves with cucumber and then top with meatballs and sauce.
