GINGER-SCALLION CHICKEN MEATBALLS WITH SESAME-SOY GLA…
Meatballs: We adore them, but we’ve been eating them the same way our entire life. And while there’s nothing wrong with red sauce and spaghetti, there’s a whole universe of other possibilities just waiting to be devoured. Like these ginger-scallion chicken meatballs, for example....

  • 1. Make the meatballs: Preheat the oven to 400?F. Line a baking sheet with aluminum foil and spray lightly with nonstick spray. 2. In a large bowl, combine the eggs, salt, scallions, garlic, ginger and panko. Add the ground chicken and, using clean hands, mix until combined. 3. Using your hands or a spoon, form the mixture into golf-ball-size meatballs and arrange on the prepared baking sheet, spacing the meatballs about 1 inch apart. (You may need to bake them in batches.) Bake until the meatballs are browned and fully cooked (the internal temperature reads 165?F on an instant-read thermometer), 20 to 25 minutes. At this point, the cooked meatballs can be stored in an airtight container in the freezer for up to 1 month. 4. Make the glaze: In a small saucepan, combine the soy sauce, rice vinegar, brown sugar, sesame oil, ginger, garlic and onion and bring to a gentle simmer. 5. In a small bowl, combine the cornstarch with 1 tablespoon cold water and whisk to combine. Add the cornstarch slurry to the soy-sesame mixture, whisking constantly until the sauce thickens slightly. Remove from the heat and set aside. 6. To serve, gentle toss the meatballs in the glaze or serve on the side for dipping. To make a rice bowl, serve with steamed white rice and assorted raw vegetables, such as sliced carrots, sliced cucumbers, shredded cabbage and sliced scallions. Garnish with sesame seeds.

T.G.I. FRIDAY'S JACK DANIEL'S GRILL GLAZE - TOP SECRET RECIPES
The Jack Daniels Grill Glaze is one of the most scrumptious sauces you will ever taste on just about any meat. Introduced in April of 1997, this glaze has become one of Friday's best-selling items. This versatile sweet-and-slightly-spicy sauce can be ordered on salmon (pictured here), baby back ribs, steak, chicken, pork chops—even on chicken wings. I was asked to clone the sauce for an appearance on the Oprah Winfrey Show and I wanted the clone to be a good one, so I persuaded a T.G.I. Friday's server to show me the list of ingredients on the box the sauce was shipped in. I jotted down the info and created this recipe using only those ingredients, which helped a lot in creating this tasty hack. Use it to top your favorite meat, but if you're grilling, be sure to apply the sauce late in the cooking process just before taking the meat off the flame, since the sauce has a lot of sugar in it and will quickly burn. And don't forget to serve extra on the side. Click here for more of my copycat recipes from T.G.I. Friday's. Source: Top Secret Recipes Lite by Todd Wilbur.

HONEY-AND-SOY-GLAZED CHICKEN THIGHS RECIPE - NYT COOKING
In this simple weeknight recipe, chicken thighs are tossed with a sweet-salty glaze made of honey and soy sauce that caramelizes into a sticky coating as it roasts in the oven. Serve the sliced chicken with bibb lettuce cups for wrapping, or over steamed rice to catch all the juices. Leftovers can be chopped and combined with vegetables for a tasty clean-out-the-fridge fried rice.

PEKING DUCK WITH HONEY AND FIVE-SPICE GLAZE - NYT COOKING
Peking duck is one of the most famous and popular Chinese dishes. The traditional method is grand and laborious, requiring three days of intense preparation. This recipe simplifies that method for a home version that comes pretty close to the original. For that coveted crisp, golden skin, all the excess fat is trimmed, and the skin is separated from the meat. The duck is then air-dried overnight and roasted vertically to ensure even cooking, while rendering out the fat. The crunchiest skin comes from the duck’s backside and legs, so carve them off first to maintain their crackly texture. A simple honey and five-spice glaze creates a beautiful mahogany lacquer on the finished duck.
