The soy flour in this version helps to make a tender pasta without eggs or dairy.

Yield 1 pound pasta

Number Of Ingredients 5

? cup soy flour
1 cup whole wheat flour
½ cup spelt flour
¾ teaspoon salt
½ cup water, or as needed

Steps:

  • In a medium bowl, stir together the soy flour, whole wheat flour, spelt flour, and salt. Add water, and mix by hand or in a stand mixer with the dough hook attachment. Use more water as needed to form a stiff but pliable dough. Mix or knead by hand for about 10 minutes. Cover, and let the dough rest for 30 minutes, or if you do not have a pasta machine, rest for at least an hour.
  • Divide dough into four pieces for easier rolling. Run dough through a pasta machine if you have one, or use a rolling pin to roll out very thin, but not transparent on a floured surface.
  • If you are making noodles, allow the pasta sheet to dry for a few minutes. Dust with flour, and roll into a loose tube. Slice the tube into 1/4 inch slices for linguine, or to desired size.
  • To cook: Bring a large pot of lightly salted water to a boil. Add pasta, and cook until al dente, 1 to 5 minutes depending on thickness. Cooked pasta will float to the top of the water.

Made these for dinner! used greek yogurt, next time trying heavy cream. BUT they were perfect! Love love love them!!! will make with greek yogurt but want to try with heavy cream. thinking they will be more firmer with cream? hubby loved them and was totally surprised! alone I think they are delis, my hubby thought they were okay. I made a marsala butter sour cream sauce with mushrooms and chicken and it was EXCELLENT!!! Tasted just like spaetzle!

2 large eggs
1/2 cup(s) soy flour
1/4 cup(s) heavy cream or greek yogurt
1 pinch(es) salt
1 dash(es) pepper

Steps:

  • Mix all ingredients well (dough very stiff).
  • If you have a noodle press, it works the best (looks like a huge garlic press)or press dough thru a colander/strainer into a big pot of boiling water, boil for a couple minutes, strain and toss with butter!
  • Serve as is or add your favorite lo-carb sauce, stew type meals, soups, the ideas are limitless!
