You can make this easy Ginger-Soy Cutlet Sauté using 1 pound of thin cutlets such as chicken, turkey, or even veal.

1 lb. thin cutlets (chicken, turkey, or veal)
1/4 tsp. salt
1/4 tsp. coarsely ground black pepper
4 tsp. olive oil
4 green onions
1 tbsp. finely chopped, peeled fresh ginger
2 tbsp. reduced-sodium soy sauce

Steps:

  • Prepare cutlets: If necessary, pound cutlets to 1/4-inch thickness. Sprinkle cutlets with salt and pepper. In nonstick 12-inch skillet, heat 2 teaspoons of olive oil over medium-high heat until hot. Add cutlets and cook 5 to 6 minutes, until golden, turning once. Transfer cutlets to platter; cover with foil to keep warm. Prepare sauce: In same skillet, heat olive oil over medium-heat until hot. Add the green onions, fresh ginger, 2 tablespoons reduced-sodium soy sauce, and 2 tablespoons water. Cover skillet and cook for 6 to 8 minutes, until ingredients are tender and lightly browned. Add 2 tablespoons reduced-sodium soy sauce and 1/4 cup of water, and cook over medium heat for 2 minutes, uncovered. To serve, pour sauce over warm cutlets. Garnish with green onions, if you like.

1/2 cup ketchup
1 clove garlic, minced
1 tablespoon minced fresh ginger
1 teaspoon soy sauce
1 teaspoon Worcestershire sauce
1 teaspoon dry sherry (optional)
1 dash of hot-pepper sauce (optional)
1 large egg
1/3 cup plain dried breadcrumbs
1 tablespoon all-purpose flour
1 pound boneless pork loin, sliced into 4 cutlets (each about 1/2 inch thick)
2 tablespoons vegetable oil

Steps:

  • Make the sauce: In a small bowl, combine all the ingredients; set aside to let the flavors develop.
  • Make cutlets: In a small, shallow bowl, whisk together egg and 2 tablespoons water. Place breadcrumbs on a plate or in a shallow bowl. Coat each slice of pork with flour, then dip in egg mixture; dredge in breadcrumbs, coating completely.
  • In a large skillet, heat oil over medium-high heat. Add pork; cook, turning once, until golden brown on both sides and cooked through, about 8 minutes. Serve with sauce.
