1 tablespoon vegetable oil
4 (4 ounce) skinless, boneless chicken breast halves, cut into cubes
4 teaspoons chili powder
2 teaspoons ground cumin
1 large onion, chopped
1 medium green pepper, chopped
1 (10.75 ounce) can Campbell's® Condensed Cream of Chicken Soup (Regular or 98% Fat Free)
¾ cup water
1 ½ cups frozen whole kernel corn
2 (15 ounce) cans white kidney beans (cannellini), rinsed and drained
2 tablespoons shredded Cheddar cheese

Steps:

  • Heat the oil in a 4-quart saucepan over medium-high heat. Add the chicken, chili powder, cumin, onion and pepper and cook until the chicken is cooked through and the vegetables are tender, stirring often.
  • Stir the soup, water, corn and beans in the saucepan and heat to a boil. Reduce the heat to low. Cover and cook for 5 minutes, stirring occasionally. Sprinkle with the cheese.

1 tsp McCormick® Garlic Powder
1 tsp McCormick® Cumin, Ground
1/2 tsp McCormick® Oregano Leaves
1/2 tsp McCormick® Cilantro Leaves
1/8 tsp McCormick® Red Pepper, Ground
1 tbsp olive oil
1 1/2 pounds boneless skinless chicken breast halves cut into 1/2-inch cubes
1/4 cup chopped onion
1 cup chicken broth
1 can (4 1/2 ounces) chopped green chiles
1 can (19 ounces) white kidney beans (cannellini), undrained

Steps:

  • Mix garlic powder, cumin, oregano, cilantro and red pepper in small bowl. Set aside.
  • Heat oil in large skillet on medium-high heat. Add chicken and onions; cook and stir 4 to 5 minutes. Stir in chicken broth, chiles and spices; bring to boil. Reduce heat to low; simmer 15 minutes.
  • Stir in beans; simmer, uncovered, 5 minutes.
