Salsa Chicken Rice Casserole Recipe | Allrecipes image

Layers of rice, chicken breast, a creamy soup and salsa mixture and two kinds of cheese add up to a simply yummy salsa casserole! This recipe is a family favorite because it's delicious and easily made with ingredients found in the pantry.

1 ⅓ cups uncooked white rice
2 ⅔ cups water
4 skinless, boneless chicken breast halves
2 cups shredded Monterey Jack cheese
2 cups shredded Cheddar cheese
1 (10.75 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can condensed cream of mushroom soup
1 onion, chopped
1 ½ cups mild salsa

Steps:

  • Place rice and water in a saucepan, and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes.
  • Meanwhile, place chicken breast halves into a large saucepan, and fill the pan with water. Bring to a boil, and cook for 20 minutes, or until done. Remove chicken from water. When cool enough to handle, cut meat into bite-size pieces.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a medium bowl, combine Monterey Jack and Cheddar cheeses. In a separate bowl, mix together cream of chicken soup, cream of mushroom soup, onion, and salsa. Layer 1/2 of the rice, 1/2 of the chicken, 1/2 of the soup and salsa mixture, and 1/2 of the cheese mixture in prepared dish. Repeat layers, ending with cheese.
  • Bake in preheated oven for about 40 minutes, or until bubbly.

1/4 cup butter
3 cups small fresh broccoli florets (from 12-oz package)
1/2 cup chopped onion
1 tablespoon finely chopped garlic
1 cup Progresso™ chicken broth (from 32-oz carton)
2 teaspoons Dijon mustard
1 container (8 oz) chive & onion cream cheese spread
1/4 teaspoon salt
1/4 teaspoon pepper
2 cups chopped deli rotisserie chicken
1 package (10 oz) frozen white rice, cooked as directed on package (about 1 1/2 cups)
2 cups coarsely crushed Ritz™ crackers (about 34 crackers)
Chopped fresh chives, if desired

Steps:

  • Heat oven to 350°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray.
  • In 12-inch nonstick skillet, melt 2 tablespoons of the butter over medium heat. Add broccoli and onion; cook and stir 3 to 4 minutes or until crisp-tender. Stir in garlic; cook 30 to 60 seconds or until garlic is fragrant.
  • Stir in chicken broth, mustard, cream cheese spread, salt and pepper. Cook and stir 3 to 5 minutes or until mixture is smooth. Stir in chicken and rice; transfer to baking dish.
  • In small microwavable bowl, microwave remaining 2 tablespoons butter uncovered on High 20 to 30 seconds or until melted. Stir in crackers; sprinkle on top of casserole. Bake 20 to 25 minutes or until bubbly around edges and heated through. Garnish with chives.
