Southerners enjoy this old-time favorite at breakfast, for dessert, and with afternoon tea.

Number Of Ingredients 9

3 cups superfine or granulated sugar
1 ½ cups unsalted butter, at room temperature
6 ounces cream cheese, at room temperature
4 large eggs, at room temperature
2 large egg yolks, at room temperature
¼ cup half-and-half
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon salt

Steps:

  • Preheat oven to 300ºF with oven rack in center of oven. Grease and flour a 10-inch (14-cup) Bundt pan.
  • Beat sugar, butter, and cream cheese with a heavy-duty electric stand mixer fitted with paddle attachment on medium-high speed until very fluffy and pale in color, 5 to 7 minutes. Add eggs,1 at a time, beating on low speed just until yellow disappears after each addition. Add egg yolks, half-and-half, and vanilla, and beat on low speed just until blended.
  • Stir together flour and salt in medium bowl; gradually add to butter mixture in 3 batches, beating on low speed just until blended after each addition, stopping to scrape down sides of bowl as needed. Remove bowl from stand, and scrape batter from paddle. Using a spatula, stir batter once by hand, scraping sides and bottom to incorporate any unmixed batter. Spoon batter into prepared pan, and gently tap pan on counter to release any large air bubbles.
  • Bake in preheated oven until cake is golden and a long wooden pick inserted in center comes out clean, 1 hour and 20 minutes to 1 hour and 30 minutes. Cool cake in pan on a wire rack 15 minutes; remove cake from pan, and cool completely on wire rack before slicing and serving, about 2 hours.

This moist pound cake is SO delicious and easy to make! Serve it plain or topped with berries and cream!

3 sticks (339 g) unsalted butter, softened
3 cups (600 g) sugar
5 large eggs
3 cups (375 g) all purpose flour, (not self-rising)
1/2 teaspoon (2 g) baking powder
1 cup (235 g) whole milk
2 teaspoons (8 g) vanilla
1 teaspoon (4 g) lemon extract (optional)

Steps:

  • Grease and flour a tube pan.
  • Lower the oven rack to the next to lowest position. Preheat oven to 350 degrees
  • In a separate bowl whisk the flour and baking powder to combine, set aside for later.
  • Cream the butter with the paddle attachment in your mixer, gradually add the sugar and beat until light and fluffy 3 to 5 minutes.
  • Add the eggs one at a time blending after each to incorporate.
  • Add the vanilla and lemon extract to the l cup of milk. Add the flour mixture alternately with the milk to the butter, sugar, egg mixture. Begin and end with the dry ingredients. I add the dry 3 times and milk twice.
  • Bake at 350 degrees for 1 hour and 10 minutes or until a toothpick comes out clean.
  • This makes approximately 8 cups of batter.
  • Allow to cool in the pan for about 10 minutes before flipping out onto wire rack.
