SOUTHERN CHOCOLATE RECIPES
OLD FASHIONED CHOCOLATE CAKE : TASTE OF SOUTHERN
This cooked chocolate icing was always on the cakes Mama made me for my birthday. Icing is thin, whereas a frosting is thicker and creamy. Takes about 15 minutes to cook, and you have to stir it constantly, but well worth the effort.

Steps:
- Place sugar in a medium sauce pot. The taller the pot the better.
- Add butter.
- Add cocoa.
- Add vanilla flavoring.
- Add milk.
- Place saucepot over Medium heat on stove top.
- Constantly stir the mixture as the sugar and butter dissolve. Do NOT walkaway.
- As pot tries to boil over, remove from heat and let mixture settle down.
- Mixture will soon settle, but you must constantly keep stirring the pot.
- Let mixture cook for 12 – 15 minutes until it thickens. Something about like applesauce or apple butter.
- Remove from heat when thickened and spread warm icing over cake layers.
- Enjoy!

Old Fashioned Chocolate Cobbler is a quick cure for that need for something chocolate. Just the aroma of chocolate filling the house makes it worth it. Quick, easy, really delicious.

Steps:
- Spray or butter a small baking dish or 8” x 8” baking pan.
- Place flour in a medium sized mixing bowl.
- Add sugar.
- Add cocoa powder.
- Add salt.
- Use a whisk to mix everything together well. Set aside for now.
- Melt the butter in another small mixing bowl.
- Add the milk.
- Add vanilla flavoring.
- Mix wet ingredients together until fully combined.
- Pour the wet ingredients into the dry ingredients.
- Gently mix everything together with a spatula until fully combined.
- Pour batter into greased baking dish. Jiggle the pan so it spreads out evenly.
- Prepare the filling mixture.
- Place brown sugar in another small mixing bowl.
- Add the white sugar.
- Add the cocoa powder. Mix together until fully combined.
- Spread this dry mixture evenly over the top of the batter in your baking dish.
- Gently pour the cup of cold water over the entire top of the dish. DO NOT STIR.
- Place the pan in the 375F degree pre-heated oven.
- Bake for 35-40 minutes until edges are crisp and center of cobbler is fairly dry on top.
- Remove from oven when done. Place on wire rack to cool.
- Let cool for 15 minutes prior to serving. It will firm up more as it cools.
