2 tablespoons mayonnaise
4 slices sourdough bread
1/4 cup canned chopped green chiles
1/4 pound thinly sliced deli turkey
1/4 cup shredded Colby-Monterey Jack cheese
1 tablespoon butter, softened

Steps:

  • Spread mayonnaise over two slices of bread. Layer with green chiles, turkey and cheese. Top with remaining bread. Spread outsides of sandwiches with butter., In a large skillet, toast sandwiches over medium heat until golden brown and cheese is melted, 1-2 minutes on each side.

The classic American burger/sandwich hybrid: A beef patty, caramelized onions, and Swiss cheese on toasted sourdough bread.

1 pound ground beef
2 medium yellow onions, thinly sliced
6 slices sourdough bread
6 slices Swiss cheese (about 1/2 pound)
6 TBSP unsalted butter, divided
salt & pepper

Steps:

  • 1. Melt 2 TBSP of the butter to a non-stick skillet over medium heat. When butter starts to foam add the onions and 1/4 tsp salt. Cook, stirring often, until onions become dark brown, about 20 minutes. Transfer onions to a plate and set aside.
  • 2. Form the ground beef into 4 patties, about the same size and shape of your bread slices. Generously season both sides of the patties with salt and pepper.
  • 3. Heat a griddle (or a large non-stick skillet) over medium heat. Melt 2 TBSP of butter on the griddle (or skillet) and cook your beef patties on both sides until well browned and cooked to desired doneness, 4 to 6 minutes per side.
  • 4. Assemble sandwiches as follows: slice of bread - slice of Swiss - beef patty - onions - slice of Swiss - slice of bread.
  • 5. Add the remaining 2 TBSP of butter on the griddle (or skillet) and cook the sandwiches until the slices of bread on each end are lightly toasted and cheese is melted.
  • 6. Transfer the sandwiches to a cutting board. Slice the sandwiches in half and serve.

Place bread, buttered side up, in the skillet; cook for 2-3 minutes or until golden brown. Turn; top two of the bread slices with the cheese. Cook 2 minutes longer or until cheese is melted., To serve, place toast cheese side up on a plate. Top with a burger, relish mixture, onion and remaining toast.
