Rach's easy 5-ingredient sourdough croutons are brushed with EVOO and melted garlic-lemon-thyme butter then broiled until charred & crunchy.

Provided by Rachael Ray

Number Of Ingredients 6

1 small round loaf sourdough bread
About ? cup extra-virgin olive oil (EVOO)
4 tablespoons butter
6 cloves crushed garlic
2 curls lemon peel
2 tablespoons fresh thyme

Steps:

  • Heat broiler
  • Cut bread in half horizontally, then cut into 12 to 16 large chunks
  • In a small pot, warm EVOO, butter, garlic, lemon and thyme
  • Place rack in upper third oven
  • Char bread at edges under broiler, brush with garlic butter mixture and broil 1 minute more, reserve

1 tablespoon unsalted butter
1?½ teaspoons extra-virgin olive oil
1?½ cups diced sourdough bread
Dash of kosher salt

Steps:

  • Melt butter in a large skillet over medium heat; stir in oil. Add bread and cook, stirring often, 5 minutes or until lightly browned on all sides. Sprinkle with salt. Remove from pan; let cool completely.

LEFTOVER SOURDOUGH BREAD: CROUTONS AND BREADCRUMBS | THE ...
There are so many ways to make croutons and breadcrumbs but this is my go-to method that produces a super crunchy and crispy result. I like to pan-fry the torn pieces of sourdough but the pieces could also be baked in a single layer on a baking sheet in the oven (375°F/190°C until golden brown). I preheat my Lodge carbon steel skillet until it’s super hot, toss in a little extra virgin olive oil, sometimes a small pad of butter with the oil, and then the chunks of sourdough. Don’t crowd the pan, you want them to be able to lie flat in a single layer for maximum toasting. For the ingredients in this recipe, I did two batches in my skillet.
