4 cups All-purpose flour
1 tsp Baking soda
1/2 tsp Salt
1 tsp Sugar
1 1/2 cups Sour milk

Steps:

In a bowl, mix together the flour, baking soda, sugar, and salt.
Add the sour milk and mix to combine with a wooden spoon. This should make a sticky dough that is not overly wet.
Transfer the dough to a lightly floured work surface and shape into a circular loaf using your hands.
Place this loaf in an oven-safe skillet that has been greased thoroughly with butter. Using a sharp knife, score the top of the loaf about 1 inch deep. The traditional scoring pattern is a cross.
Place in an oven that has been preheated to 350 degrees Fahrenheit. It will need to bake for around 40 minutes. We suggest allowing the loaf to cool for an hour when removed from the oven, before serving.
If you choose to make the bread using whole-meal wheat flour it will make a slightly soured brown loaf. Traditionally soda bread is made with white flour.

Sweet and Sour Sauce
3/4 cup sugar
1/3 cup ketchup
2/3 cup water
1 tablespoon soy sauce
1/4 teaspoon salt
1/2 cup vinegar
3 1/2 tablespoons cornstarch
1/3 cup water
1 lb ground beef
1/2 cup chopped white onion
3 green onions, chopped
1 bag (16 oz) coleslaw mix
Soy sauce
1 package (1 lb) egg roll skins
Vegetable oil

Steps:

To make sweet and sour sauce, in 1-quart saucepan, mix sugar, ketchup, 2/3 cup water, 1 tablespoon soy sauce and the salt. Cook 5 minutes. Stir in vinegar.
In small bowl, mix cornstarch and 1/3 cup cold water. Add to sauce; cook until thickened.
To make egg rolls, in 12-inch skillet, cook ground beef, onion and green onions until beef is thoroughly cooked. Drain off excess fat.
Stir in coleslaw mix. Add soy sauce by pouring around top of mixture about 2 times. Taste and check saltiness; you can always add more. Cook until thoroughly heated.
While cabbage mixture is cooking, place egg roll skins on large work surface. Spoon 1 serving spoon-size of beef mixture on center of each skin. For each egg roll, bring up bottom corner; fold in side corners and roll up. Bring down top corner; wet with small amount of water to stick.
In small skillet, heat oil. When oil is hot, fry egg rolls until crispy. Shake off excess oil.

1. Peel the garlic and deseed the chillies, then roughly chop and place into a pestle and mortar. Bash with a pinch of salt to a rough paste. Peel, finely chop and add the ginger, then bash until broken down and combined.
2. Finely slice the mushrooms and bamboo shoots. Heat a lug of oil in a large wok or heavy-based saucepan over a medium-high heat, add the mushrooms and fry for 4 minutes, or until lightly golden. Stir in the chilli paste and bamboo shoots and fry for a further minute.
3. Meanwhile, mix together 3 tablespoons of soy, 4 tablespoons of rice wine vinegar, the honey and a good pinch of white pepper. Stir the mixture into the pan and cook for a minute, then pour in the hot stock and bring gently to the boil. Reduce the heat to low and simmer for 10 minutes, or until slightly reduced. Meanwhile, chop the tofu into 1cm cubes, finely slice the spring onions and chives and whisk the egg well.
4. Once reduced, remove the soup from the heat. Using a chopstick, stir the soup in a clockwise direction until you get a little whirlpool, then slowly add the beaten egg, stirring continuously to form thin ribbons. Stir in the tofu and return to the heat for 1 minute to warm through. Season to taste with soy and vinegar, then serve immediately with the spring onions and chives scattered on top.
