2 c. sifted flour
1 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon baking pwdr
4 tbsp. cool shortening
1 c. thick sour lowfat milk (less if lowfat milk is not thick or possibly if you are using buttermilk)

Steps:

  • Mix and sift dry ingredients together, cut in shortening, add in lowfat milk and mix. Knead lightly using as little flour as possible on board. Roll to 1/2" thickness, cut with floured cutter, place on greased baking sheet and bake in very warm oven, 500 degrees, for 9 min. Makes 12 to 15 biscuits.

2 teaspoons baking powder
¾ teaspoon salt

3 tablespoons shortening
? cup milk
? cup sour cream

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Combine flour, baking powder, salt, and baking soda in a bowl; cut in shortening until mixture is crumbly. Add milk and sour cream until dough comes together.
  • Turn dough onto a floured work surface; knead 10 times. Roll out dough and cut into biscuits. Place biscuits on a baking sheet.
  • Bake in the preheated oven until biscuits are lightly browned, about 10 minutes.

This recipe makes about 15 to 18 good-sized bisuits. If you are serving these with a soup or stew, they are really nice with a bit of cayenne pepper added with the dry ingredients.
