Number Of Ingredients 7

4 cups homemade chicken stock or low-sodium broth (or low-sodium broth)
Salt and freshly ground pepper
2 cups cooked white rice (warmed)
2 large egg yolks
¼ cup plus 2 tablespoons fresh lemon juice
1 rotisserie chicken ( pound meat pulled from the bones and coarsely shredded)
¼ cup chopped fresh dill

Steps:

  • In a large saucepan, season the stock with salt and pepper and bring to a simmer. Transfer 1 cup of the hot stock to a blender. Add 1/2 cup of the rice, the egg yolks and the lemon juice and puree until smooth. Stir the puree into the simmering stock along with the chicken and the remaining 1 1/2 cups of rice and simmer until thickened slightly, 10 minutes. Stir in the dill and serve.

1 1/2 lb. boneless skinless chicken breasts
1 large onion, chopped
3 carrots, peeled and sliced into coins
2 stalks celery, sliced
4 tsp. sprigs fresh thyme
4 tsp. sprigs fresh rosemary 
3 cloves garlic, minced
1 bay leaf
Kosher salt
Freshly ground black pepper
10 c. low-sodium chicken broth
8 oz. egg noodles

Steps:

  • In a slow cooker, combine chicken, onion, carrots, celery, thyme, rosemary, garlic, and bay leaf and season generously with salt and pepper. Pour in broth. Cover and cook on low, 6 to 8 hours. Remove chicken from slow cooker and shred with two forks. Discard herbs and bay leaf. Return chicken to slow cooker and add egg noodles. Cook on low, covered, until al dente, 20 to 30 minutes.
