This is the easiest cookie recipe ever and the result is a melt-in-your mouth dessert that is great with a cup of tea, coffee, cider, hot chocolate, whatever. If made properly they taste more like little cakes. This is a traditional Irish recipe I have tweaked over the years to make my own. I usually double this recipe since they tend to go very quickly!

Number Of Ingredients 8

2 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon baking soda
1/2 cup butter, softened
1/4 cup buttermilk
1 egg, beaten
1/4 teaspoon salt (optional)
6 tablespoons fruit preserves (optional)

Steps:

  • Preheat oven to 350°F.
  • Combine dry ingredients in a large bowl. Add butter. Knead with hands until the mixture becomes consistent in texture (it will be a bit coarse).
  • Add the egg and buttermilk. Knead with hands just until the mixture is smooth and doughy.
  • Line cookie sheets with wax paper. Drop dough by the tablespoonful onto cookie sheets (no more than twelve per sheet).
  • If desired, use the back of a spoon to gently press a well into each cookie and fill with 1/3 teaspoon of jam/preserves. I find raspberry jam goes perfectly with the flavor of these cookies.
  • Bake for 12-14 minutes, or until cookies are "domed" and slightly golden.

My aunt gave us all this recipe a long, long time ago. We love them!

2 - sleeves of saltine crackers
1 cup(s) butter
1 cup(s) sugar
1 1/2 cup(s) chocolate chips
2/3 cup(s) chopped walnuts

Steps:

  • Line a cookie sheet or jelly roll pan with foil and butter it well. Fill the pan with soda crackers.
  • Put the butter and sugar in a pan and boil together for 3 minutes then pour over the crackers and spread it around to cover them all.
  • Bake in a 400 degree oven for 4 minutes. Take out and immediately sprinkle with the chocolate chips. Let sit for a couple of minutes and then spread the chips around until the entire pan is covered with chocolate. Sprinkle with the walnuts.
  • Score the pan of cookies. Cool completely and cut where you scored and store in an airtight container.
