SUPER SUMMER GRILLED BLUEFISH RECIPE | ALLRECIPES
Have a ton of bluefish and don't know what to do with it? Give this a try! Bluefish has a reputation for being a very strong fish. This super citrus marinade gives this grilled fish a bright and delicious flavor. I just made some (which I caught and froze) and it came out superb.

Steps:
- Place the fish fillets into a large bowl. Pour in the orange juice, lime juice, lemon juice, olive oil and white wine. Season with salt, pepper and seafood rub. Stir to blend and coat fish. Leave the squeezed lemon and lime halves in the bowl too. Marinate for at least 30 minutes.
- Preheat a grill for high heat. When the grill is hot, oil the grate.
- Place fish fillets on the grill, and discard the marinade. Cook for 4 minutes on each side, or until fish flakes with a fork. Transfer to a serving platter, and remove the dark blue part of the fish before serving.

A baked bluefish recipe which surrounds the palate with bluefish flavor but not the fat or typically strong bluefish odor. This fish tastes delicious served over cooked rice, egg noodles or on a tossed salad.

- Preheat oven to 500 degrees F (260 degrees C).
- Trim all of the dark meat from the fillets. Rinse in cold water, dry and sprinkle with salt and pepper. Combine stuffing mix with boiling water and 1/2 cup melted butter.
- Cover a baking sheet with a lightly greased double thickness of aluminum foil. Spread stuffing mixture on top of foil. Place fillets on top of stuffing. Brush fillets with 2 tablespoons melted butter and sprinkle with minced onions. Top with dill springs and crimp together edges of tin foil to seal.
- Bake on center self of preheated oven for 10 minutes, reduce oven temperature to 400 degrees F (200 degrees C) and bake for an additional 60 minutes.

- 1. Cut the potatoes lengthwise into ½-inch thick slices. 2. Place in a saucepan and cover with cold water. Bring to a rapid simmer and cook until just tender to the tip of a knife, 6-8 minutes. Drain and set aside. 3. Pat the snapper fillets dry with paper towels; season with salt and pepper. 4. Heat a large skillet over moderate heat until hot. Add 2 Tablespoons oil, swirl to coat, and then position the snapper in the skillet, skin-side down, frying until the skin is golden brown underneath, 3-4 minutes; flip and cook the other side until the flesh is opaque and flaky, 2-3 minutes. Remove to a plate and cover with aluminum foil. 5. Add the remaining 2 Tablespoons oil to the skillet. Working in batches if necessary, add the potato slices to the skillet and fry, turning once, until golden, 3-4 minutes. 6. Remove to a clean plate and cover with foil to keep warm. 7. Set the skillet back over medium heat. Add the garlic, tomatoes, and a pinch of salt, cooking until the garlic is just golden, about 1 minute. Set off the heat and stir in the chopped olives and basil. 8. To serve, divide the potatoes and snapper between plates. Spoon over the tomatoes, olives, garlic, and basil from the skillet.
