Decadent Smoky Brussels Sprouts Recipe | Cooking Light image

Since there’s a touch of sugar in this recipe, stir the Brussels sprouts often to prevent burning. If you’re feeling extra decadent, top this side with a little grated Manchego cheese.

Yield Serves 4 (serving size: about 1/2 cup)

Number Of Ingredients 8

1 tablespoon olive oil
1 pound trimmed and halved Brussels sprouts
1 tablespoon chopped garlic
2 teaspoons light brown sugar
1 teaspoon smoked paprika
1/4 teaspoon kosher salt
3 tablespoons apple cider vinegar
2 tablespoons chopped salted smoked almonds

Steps:

  • Heat 1 Tbsp. olive oil in a large skillet over medium-high. Add 1 lb. trimmed and halved Brussels sprouts; cook, stirring often, until browned, 10 to 12 minutes. Add 1 Tbsp. chopped garlic, 2 tsp. light brown sugar, 1 tsp. smoked paprika, and 1/4 tsp. kosher salt. Cook, stirring often, 1 minute; remove from heat. Stir in 3 Tbsp. apple cider vinegar. Sprinkle with 2 Tbsp. chopped salted smoked almonds.

Olive oil
Sea salt
Seasoned salt
Balsamic glaze

Steps:

  • 1. Preheat smoker to 175°C propane or, 135°C electric. 2. Heat a cast iron skillet in the smoker until very hot. While the pan is heating, slice the Brussel sprouts in half. 3. Remove skillet with gloves and coat with olive oil. 4. Sprinkle sea salt on skillet and place Brussel sprouts cut-side down. 5. Season with seasoned salt and smoke for 30-45 minutes at 175°C propane or 1 hour at 135°C electric. 6. Remove from smoker and drizzle balsamic glaze on top. 7. Serve and enjoy!

I admit I hated them as a kid too. I was at deer camp a few years ago and one of my uncles brought a bunch he had from the farmers market. Knowing my culinary aptitude, he tossed the bag at me and said "see what you can do with these" This being a hunting camp, the pressure was on. I couldn't make some fancy dish, so I tried to keep it simple and came up with this. You can use any smoked sausage you like, I prefer a Portuguese linguisa, but you can use kielbasa, bacon or ham as well. You can omit the crushed red pepper if you don't like a bit of heat. Can be served as a side dish or a main course. This is the only way to eat brussel sprouts IMO.
