Smoked beef roasts are the best way we’ve found to get the deep smokey flavor we love in roast beef. Smoking a roast over low heat develops the beef’s natural flavors while creating a tender roast that melts in your mouth.

- Start by mixing the salt, pepper, smoked paprika, garlic, and onion powders together.
- Give the roast a good rub down with Worcestershire sauce before applying the spice rub. The Worcestershire sauce helps the rub adhere to the roast and adds flavor.
- There are a couple of ways you can smoke the roast, depending on how much time you have. For the best results cook it in a smoker at around 215℉ for 4 to 6 hours. The roast is ready to come out when its internal temperature is between 145℉ to 155℉ degrees.
- Let the roast rest for 20 minutes, covered with foil, before slicing. Sprinkling a little salt on the slices before serving them to help brighten up the beef’s flavors.

HOW TO MAKE A SMOKED TURKEY BREAST BRINE RECIPE

- Bring cider, cooking wine, and next 8 ingredients to a boil in a large stockpot over medium-high heat. Reduce heat and simmer for 5 minutes until salt and sorghum are dissolved. Remove pot from heat, stir in ice. Cover and place in the refrigerator for 1 hour.
- Place turkey in the brine. (Brine should mostly cover turkey. If it doesn’t, find a smaller pot. If the turkey still isn’t fully covered, you’ll need to turn it over in the brine about halfway through the process.) Cover and chill in the refrigerator for 5 to 12 hours. (Do not over brine your turkey or you’ll end up with salty meat!)
- Prepare your smoker according to the manufacturer's directions, bringing the internal temperature to 225 degrees F using your favorite type of wood chips.
- Remove the turkey breast from the brine. Pat dry with paper towels. Place turkey low in the smoker and cook for 3 to 3 1/2 hours or until a meat thermometer inserted into the thickest portion registers 165 to 170 degrees F.
- Remove cooked turkey breast, cover loosely with aluminum foil, and let stand 10 to 15 minutes before slicing.

Preheat the oven to 180°C, fan 160°C, gas 4. Cut the bread into 6 thin slices, then cut each slice into 4 small triangles. Spread the triangles out on a large baking sheet, drizzle over the olive oil and season with freshly ground black pepper.
Bake for 5 minutes, then turn the triangles over and bake for a further 5 minutes. Remove from the oven and set aside.
Put three quarters of the smoked salmon in a food processor with the soft cheese, horseradish and lemon juice. Whizz until you have a smooth pâté, then transfer to a bowl. Stir in the rest of the smoked salmon and the finely snipped chives. Season with freshly ground black pepper.
Top each crouton with a small dollop of the pâté. Use a vegetable peeler to cut the cucumber into thin ribbons and arrange them on top of the pâté. Garnish with the extra chives, season with freshly ground black pepper and serve on a platter with the lemon wedges to squeeze over.
