1 lb smoked sausage, chopped
2 tablespoons butter
3 potatoes, peeled and diced
2 stalks celery, chopped
3 carrots, chopped
1/2 cup diced onion
14 ounces corn with juice
1 cup water
14 ounces evaporated milk
1 tablespoon fresh dill or 1 teaspoon dried dill
1/2 teaspoon cayenne pepper
1 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • In a large saucepan, melt the butter over low heat being careful not to burn it.
  • Add potatoes, celery, carrots and onions and saute until softened.
  • Add smoked sausage, corn with juice and water and simmer, covered approximately 30 minutes or until vegetables are tender.
  • Add evaporated milk, dill, cayenne pepper and salt and pepper and continue to simmer for about 5 minutes.

4-1/2 cups water
1 can (28 ounces) diced tomatoes, undrained
1 envelope onion soup mix
1 package (9 ounces) frozen cut green beans
3 small carrots, halved and thinly sliced
2 celery ribs, thinly sliced
1 tablespoon sugar
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/8 teaspoon hot pepper sauce
1 pound smoked sausage, halved and thinly sliced
2-1/2 cups frozen shredded hash brown potatoes

Steps:

  • In a Dutch oven, combine the first 10 ingredients. bring to a boil. reduce heat; cover and simmer for 20-25 minutes or until vegetables are tender. , Stir in sausage and hash browns. Bring to a boil. Reduce heat; cover and cook for 5 minutes or until heated through.
