Yield 1 1/4 cups. Gas Grill Directions: Soak mesquite chips in water 30 minutes; drain. Wrap chip

Number Of Ingredients 10

2 cups mesquite chips
1 head garlic
5 plum tomatoes, seeded and cut in half lengthwise
1 medium onion, peeled and separated into rings
2 large shallots, peeled and cut in half lengthwise
½ jalapeno pepper, seeded and cut in half lengthwise
Vegetable cooking spray
¼ cup chopped fresh cilantro
¼ cup fresh lime juice
¼ teaspoon salt

Steps:

  • Soak mesquite chips in water 30 minutes; drain.
  • Peel outer skin from garlic; cut off and discard top one-third of garlic head. Place garlic (cut side up), tomato halves (cut side down), and next 3 ingredients in a grill basket.
  • Pile charcoal on each side of grill, leaving center empty. Place a drip pan between coals. Prepare fire; let burn 10 to 15 minutes. Place half of mesquite chips on hot coals. Coat grill rack with cooking spray, and place over coals. Place grill basket on rack over drip pan; cover and cook 30 minutes. Turn vegetables, and add remaining mesquite chips to hot coals. Cover and cook 30 minutes or until vegetables are tender and lightly browned.
  • Remove vegetables from grill. Squeeze out pulp from each clove of garlic. Position knife blade in food processor bowl; add garlic pulp and vegetables. Process until coarsely chopped, scraping sides of processor bowl once. Transfer vegetables to a small bowl; add cilantro, lime juice, and salt, stirring well. Serve at room temperature or chilled. Use as a dip with no-oil baked tortilla chips or as a topping for tacos or other Mexican recipes.

We have an abundance of tomatoes and peppers from our garden. It has been a banner year for tomatoes since we had so much rain early in the season! Therefore, we decided to make salsa with our harvest.

7 pound(s) tomatoes chopped
1 pound(s) peppers diced
1 large red onion chopped
1 large yellow onion chopped
1 - head of garlic chopped
1 bunch(es) cilantro leaves only
1 bunch(es) thyme, leaves
6 - hot red peppers chopped
3 tablespoon(s) kosher salt
2 ounce(s) lime juice
6 dash(es) tabasco smoked chipotle sauce
1 - cap full of smoke

Steps:

  • First, we boiled the jars, rings and lids to sterilize. Chopped all the ingredients. In a pan with hot oil we added the onions let them cook for about one minute then add the garlic. We then added the peppers and tomatoes salt, hot peppers, lime juice, Tabasco and the liquid smoke. This cooked for about 8-9 minutes we then added the cilantro and thyme.
  • The mixture was removed from the stove and we began to fill the jars with the salsa. We wiped the edge of each jar with a clean paper towel then lifted the lid with a magnet and placed the lid on the top of the jar. You need to be careful not to touch the sterilized lids and jars so your salsa does not become contaminated, Once the lid is in place we twisted the rings in place to hold the lids. Back into the boiling water bath. The jars boiled for 15 minutes and were removed from the water and allowed to cool. As the jars are cooling, you will hear the lids popping and sealing themselves. If they do not pop, you can push them down and as long as they do not pop back up it is a good seal! Once completed cooled we removed the rings and labeled the salsa. Good eats!!!
