These lovely little smoked salmon bites are easy, tasty nibbles, perfect for parties

½ teaspoon creamed horseradish
½ small tub crème fraîche
1 small pinch sea salt
1 small pinch freshly ground black pepper
1 squeeze lemon juice
1 loaf ciabatta
extra virgin olive oil
300 g smoked salmon from sustainable sources, ask your fishmonger
½ punnet cress
extra virgin olive oil
1 squeeze lemon juice

Steps:

    1. There are certain winning combos that work every time; best friends that will never let you down and give you big bang for your buck. This recipe is easy to scale up so adapt it for however many people you’ve got coming round.
    2. Add ½ a teaspoon of creamed horseradish to ½ a small tub of crème fraîche. Sprinkle in a small pinch of sea salt and freshly ground black pepper and a squeeze of lemon juice then mix well. Taste to check its hot enough. Cut a loaf of ciabatta into 1cm thick slices, toast or griddle them then drizzle over a little extra virgin olive oil. Top with waves of smoked salmon (a 300g pack is perfect here) Add a dollop of horseradish crème fraîche to each toast then snip over ½ a punnet of cress. Finish with a tiny drizzle of extra virgin olive oil and a little squeeze of lemon juice. Delicious.

Lox and bagels are one of my all-time favorite breakfasts. I love getting a serving of good for you salmon combined with cream cheese mixed with onion. The problem is that traditionally it is made with bagels and cream cheese, which provide more calories and fat than I want for breakfast during the week. This version, made with toast and cottage cheese, is a good alternative and a great way to get more servings of Omega-3 and a boost of protein from the cottage cheese first thing in the morning. This recipe is just a guide; sometimes I add capers, tomatoes, cucumbers or any other veggies that are in the fridge. This version is my go-to recipe because I usually have all these ingredients on hand.

1-2 pieces toasted rye (pumpernickel, or ancient grain bread)
2-3 pieces smoked salmon or lox
1/4-1/2 cup organic cottage cheese
Sliced shallots or red onion
Sliced veggies
Salt and pepper (to taste)
Dill (dried or fresh, to taste)
Lemon wedge

Steps:

  • Toast one or two pieces of good rye, ancient grain, or pumpernickel bread. Spread cottage cheese and add a little salt and pepper. 
  • Layer thinly sliced shallots or red onion and any other sliced vegetable you are using. Layer two or three pieces of the cold smoked salmon, sprinkle with dried or fresh dill and a quick squeeze of lemon.
