Number Of Ingredients 8

1 frozen pie shell
1 cup half and half
6 eggs beaten
1/4 teaspoon Salt
1/4 teaspoon Pepper
1 cup shredded swiss or cheddar cheese
1 tablespoon chopped green onion
1/2 cup diced tomatoes

Steps:

  • Set your pellet grill at 350 using Cookinpellets 100% Hickory pellets.
  • Smoke the shell in the pan for 10 minutes then remove.
  • In a bowl mix all the ingredients above (minus the shell).
  • Pour the mixture into the shell and bake in the grill for about 45-50 minutes. Check with a knife if the knife pulls out clean it is done.
  • Pull off and let stand 5 minutes.
  • Slice into wedges and ENJOY!

My son fishes for salmon on the Kenai River in Alaska and smokes much of what he catches. My mother passed this recipe on to me to help me find new ways to cook with salmon. Regular salmon also works in this quiche, but the smoked flavor can't be beat! —Rose Marie Cherven, Anchorage, Alaska

Number Of Ingredients 10

1 sheet refrigerated pie crust
1 cup shredded reduced-fat Swiss cheese
1 tablespoon all-purpose flour
3 plum tomatoes, seeded and chopped
2 tablespoons finely chopped onion
2 teaspoons canola oil
3 ounces smoked salmon fillet, flaked (about 1/2 cup)
4 large eggs
1 cup 2% milk
1/4 teaspoon salt

Steps:

  • On a lightly floured surface, unroll crust. Transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond edge of plate; flute edges., In a small bowl, combine cheese and flour. Transfer to crust., In a large skillet, saute tomatoes and onion in oil just until tender. Remove from the heat; stir in salmon. Spoon over cheese mixture., In a small bowl, whisk the eggs, milk and salt. Pour into crust. Bake at 350° for 35-40 minutes or until a knife inserted in the center comes out clean. Let stand for 15 minutes before cutting.
    Freeze option: Securely wrap and freeze cooled quiche in plastic wrap and foil. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Unwrap quiche; reheat in oven until heated through and a thermometer inserted in center reads 165°.

  • Start by making the pastry. Put the butter and flour into a bowl and rub together until the mixture resembles fine grains of sand. Mix the remaining ingredients together and add them little by little. Blend until mixed, shape into a ball, wrap in clingfilm and refrigerate. Preheat the oven to 140ºC/gas mark 1. Melt the butter in a pan, add the leeks, onions and garlic with some salt and pepper, and cook gently until soft. Leave to cool. Roll the pastry out to the required thickness, then place on a tray lined with parchment paper and refrigerate for 15 minutes before using. Cut the haddock into three pieces, place them in a flat-based pan and cover with the milk. Bring to the boil, then reduce to a simmer and poach the haddock until lightly cooked. Remove the fish from the milk, reserving the milk and leave to cool. Remove the skin, flake the fish and add to the leek mixture. Spread evenly over the base of your tart case. Whisk the eggs, cream and poaching milk together. Pour the cream mixture into the tart case, on top of the leeks, then place in the oven for 25 minutes. Serve in slices, with a rocket salad dressed with a grain mustard vinaigrette.

  • Preheat oven to gas mark 6/200ºC (180ºC in a fan oven). Roll out pastry on a lightly floured board. Carefully line tin, letting pastry hang over edge. Chill for 20 mins if time, then trim.  Fill with parchment paper and beans. Bake for about 20 mins, or until edges are just beginning to turn golden. Remove from oven, take out beans and paper, then put back in oven for 1-2 mins. Remove and put to one side. Turn down oven to gas mark 4/180ºC (160ºC in a fan oven). Heat oil in frying pan. Add spring onion, season, and cook for 1-2 mins until soft. Leave to cool, then tip into pastry base.
