8 slices French bread
2 tablespoons butter, softened, or as needed
2 medium Granny Smith apples, cored and sliced
1 pound smoked Gouda cheese, shredded

Steps:

  • Heat a griddle over medium-low heat.
  • Butter bread slices on one side. Place 1/2 of the bread on the hot griddle, buttered-sides down. Add apple slices and shredded Gouda cheese to each slice, then top with remaining bread.
  • Cook until golden brown, 3 to 5 minutes per side.

4 slices of sourdough bread (or your favorite type of bread)
4 tablespoons butter
4 dashes granulated garlic
1 cup shredded Gouda cheese
1 cup shredded sharp cheddar cheese
1/2 cup shredded mozzarella cheese
1 cup marinated artichoke hearts ((cut larger pieces in half))

Steps:

  • Heat a large skillet on low heat and add half of the butter. Lay the slices of bread in the pan and let toast until the bottom sides are a golden color. Then remove the toast from the pan on to a plate for just a moment. 
  • Add the remaining butter in the pan. Sprinkle the garlic powder on the butter and stir together. 
  • Add the slices of bread back in the pan with the untoasted sides face down. Top each piece of bread with each type of cheese. 
  • On 2 slices of the bread, top with artichoke hearts. Carefully turn over the non-artichoke slices of bread on top of the slices of bread with the artichokes on it to make a sandwich. 
  • Continue to cook until the cheese melts. Be careful that the bread doesn't get too brown on the bottom. Turn the heat down if needed. Serve right away.

  • Assemble the sandwiches: Preheat oven to 400 degrees F. Combine the butter and peppers in a small bowl and set aside. Rub one side of each slice of bread with garlic and place 4 slices, garlic-rubbed side down, on a clean work surface. Spread the top of each of the 4 slices with 1 teaspoon of the mustard and 2 ounces of the Gouda. Place the remaining slices of bread, garlic-rubbed side up, on sandwich bottoms and set aside. Grill the sandwiches: Heat a large ovenproof skillet over medium-high heat. Using a pastry brush, coat one side of the sandwiches with the butter mixture. Place the sandwiches, buttered side down, in the hot skillet and cook until golden -- about 2 minutes. Brush the tops of the sandwiches with the remaining butter mixture, turn the sandwiches over, and cook for 2 more minutes. Place the skillet in the oven and bake until the cheese is completely melted -- about 5 minutes. Serve immediately.
