Chicken leg quarters smoked to perfection in an electric smoker.

2 tablespoons salt, or to taste
1 teaspoon garlic powder
1 teaspoon red pepper flakes
1 teaspoon ground black pepper
1 dash cayenne pepper
4 medium (blank)s chicken leg quarters
wood chips, soaked in water for 20 minutes

Steps:

  • Combine salt, garlic powder, red pepper flakes, black pepper, and cayenne in a bowl. Marinate chicken leg quarters in the homemade seasoning rub for 4 to 8 hours.
  • At the same time, set an electric smoker to 275 degrees F (135 degrees C) for 3 hours. Keep the top vent closed.
  • Place 1 chicken leg quarter on each of the wire racks. Place the racks into the smoker. Add water to the water pan. Add 2 loads of soaked wood chips according to manufacturer's instructions and open the vent.
  • Smoke chicken until no longer pink in the center and the juices run clear, about 2 1/2 hours, adding more wood chips after each hour. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

6 chicken leg quarters
1½ tsp or to taste kosher salt
1 tsp or to taste black pepper
2 tsp garlic powder
2 tsp onion powder
1 tbsp ancho chile powder
½ tsp optional, adjust the amount to taste cayenne pepper
½ tbsp for rubbing vegetable oil
½ cup for frying; or butter cooking oil

Steps:

  • Preheat smoker to 275 degrees F at the grate level.
  • Rub the chicken with oil and evenly sprinkle the seasonings on both sides of each leg quarter. Get some seasonings under the skin. Pat down to make the seasonings stick.
  • In a large cast iron skillet, heat ½ cup of cooking oil, or butter, over medium-high heat. In two batches, sear the chicken quarters, about 2 minutes per side or until the skin is golden brown.
  • Transfer the chicken to the smoker, skin side up.
  • Smoke at 275 degrees F for about 1½ hours, or until the internal temperature reaches 185 to 190 degrees F.
  • Remove the chicken from the smoker, let rest for 3 minutes and serve with any favorite side dish.
