Vegetable juice brings fantastic flavor to slowly simmered Swiss steak.

2 small onions, sliced
3-pound beef boneless round steak, trimmed of fat and cut into serving-size portions
1 envelope (0.87 ounce) brown gravy mix
1 can (12 ounces) vegetable juice
2 medium stalks celery, cut into 1/2-inch slices
1 package (16 ounces) frozen home-style egg noodles

Steps:

  • Place onions in 3 1/2- to 4-quart slow cooker. Arrange beef on onions, overlapping to fit if needed. Sprinkle gravy mix (dry) over beef. Pour vegetable juice over all. Place celery on top.
  • Cover and cook on low heat setting 8 to 10 hours.
  • About 15 minutes before serving, cook noodles as directed on package. Serve sauce, vegetables and beef over noodles.

3/4 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon pepper
2 pounds boneless beef round steak, cut into serving-size portions
2 tablespoons butter
1/2 cup chopped onion
2 cans (10-3/4 ounces each) condensed cream of mushroom soup, undiluted
1 cup water
Hot cooked noodles

Steps:

  • In a large resealable plastic bag, combine the flour, salt and pepper. Add beef, a few pieces at a time, and shake to coat., In a large skillet, brown beef in butter on both sides. Transfer to a 3-qt. slow cooker; top with onion. Combine soup and water; pour over onion. Cover and cook on low for 8-10 hours or until meat is tender. Serve with noodles.
