2 lbs boneless skinless chicken breast halves
1 onion, thinly sliced
1 red sweet bell pepper, julienned
1 teaspoon ground cumin
1 1/2 teaspoons chili powder
1 teaspoon lime juice
1/2 cup chicken broth
8 -10 warmed flour tortillas
guacamole (optional)
sour cream (optional)
lettuce (optional)
tomatoes (optional)

Steps:

  • Cut chicken into diagonal strips and place in slow cooker sprayed with vegetable cooking spray.
  • Place onion, and bell pepper on top of chicken.
  • In a mixing bowl, combine cumin, chili powder, lime juice, and chicken broth, and pour over chicken and vegetables.
  • Cover and cook on low for 5-7 hours.
  • When serving, spoon several slices of the chicken mixture with sauce into center of each warm tortilla and fold.
  • Serve with guacamole, sour cream, lettuce, or tomatoes, or plain.

Then I made these slow cooker fajitas, and my husband and I savored every last bite. 1 each medium green, sweet red and yellow peppers, cut into 1/2-inch strips
1 sweet onion, cut into 1/2-inch strips
2 pounds beef top sirloin steaks, cut into thin strips
3/4 cup water
2 tablespoons red wine vinegar
1 tablespoon lime juice
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon pepper
1/2 teaspoon cayenne pepper
8 flour tortillas (8 inches), warmed
1/2 cup salsa
1/2 cup shredded reduced-fat cheddar cheese
8 teaspoons fresh cilantro leaves

Steps:

  • Place peppers and onion in a 5-qt. slow cooker. Top with beef. Combine water, vinegar, lime juice and seasonings; pour over meat. Cover and cook on low until meat is tender, 8-10 hours., Using a slotted spoon, place about 3/4 cup meat mixture down the center of each tortilla. Top with salsa, cheese and cilantro; roll up.

Mix well and then place the chicken breast on top. Sprinkle the remaining 1-tablespoon of fajita seasoning on the top of the chicken. Pour the orange juice in the slow cooker. Cook for 4 hours on high. Once the chicken is cooked, remove the chicken, shred, and top with 1 teaspoon fajita seasoning. Mix in the other 3 teaspoons of fajita seasonings into the vegetables.
