Easy Brunswick Stew in a Slow Cooker Recipe | Cooking Light image

Brunswick stew is a Southern dish that features a tomato base with beans, vegetables, and meat. Traditionally, Brunswick stews were made with squirrel or rabbit, but these days pork and chicken are commonly used. This recipe is a good use of leftover meat and vegetables, as well as ingredients you probably have in your pantry.

1 1/4 cups chopped green bell pepper
1 cup frozen cut okra, thawed
1 cup barbecue sauce
1 cup chopped cooked chicken breast
1/2 cup chopped celery
1/2 tsp. freshly ground black pepper
1/4 tsp. salt
3/4 lb. pulled smoked pork, chopped
2 (8-oz.) cans no-salt-added tomato sauce
1 (151/4-oz.) can whole-kernel corn with sweet peppers, drained
1 (14.5-oz.) can no-salt-added diced tomatoes, undrained

Steps:

  • Combine all ingredients in a 7-quart slow cooker. Cover and cook on high for 8 hours.

Steps:

  • In a slow cooker, combine all ingredients. except for okra, cornstarch, water, and seasoning. Cover the pot and cook on a high-heat setting for 4-5 hours, adding okra during the last 20 minutes.
  • In a small mixing bowl, combine cornstarch and water. Mix well.
  • Add cornstarch mixture to the slow cooker, stirring 2-3 minutes. Season to taste with salt and black pepper.
