Slow Cooker Cheesy Ranch Potatoes

2 pounds creamer potatoes
4 tablespoons melted butter
1 tablespoon Hidden Valley® Original Ranch® Seasoning & Salad Dressing Mix Shaker
½ cup heavy cream
¼ cup sour cream
1 cup shredded Colby Jack cheese
chopped parsley

Steps:

  • Stir potatoes with the melted butter, then sprinkle with ranch seasoning mix. Toss well to coat evenly.

  • Grease the bottom and up a couple inches of the sides of a slow cooker pot with butter and place potatoes inside. Cover and cook on low for 4 hours or high for 2 hours.

  • Stir in the cream, sour cream and cheese. Cover and cook on high for an additional 15–20 minutes until warmed through and the cheese is melted.

  • Gently stir (it’s ok if the potatoes fall apart a bit). Garnish with parsley or dill, if desired, and serve warm.

Once it's done, build a delicious sandwich with Swiss cheese, Thousand Island dressing and toasted pumpernickel rye bread.

1 package (2 pounds) refrigerated sauerkraut
1 package (2 to 3 pounds) corned beef brisket
1 cup Thousand Island dressing
16 slices pumpernickel rye bread, toasted
8 slices (1 ounce each) Swiss cheese

Steps:

  • Place sauerkraut in 3- to 4-quart slow cooker. Place beef brisket on sauerkraut. (If brisket includes packet of spices, sprinkle spices over brisket.)
  • Cover and cook on Low heat setting 9 to 11 hours.
  • Remove beef from cooker; place on cutting board. Cut beef into slices. To serve, spread 1 tablespoon dressing on each toast slice. Using slotted spoon to remove sauerkraut from cooker, top 8 slices toast with 1/2 cup sauerkraut each. Top sauerkraut with beef slices and cheese slice. Top with remaining toast. Note: This recipe was tested in slow cookers with heating elements in the side and bottom of the cooker, not in cookers that stand only on a heated base. For slow cookers with just a heated base, follow the manufacturer’s directions for layering ingredients and choosing a temperature.
