3 large potatoes, cut into cubes
1 pound carrots, cut into 3/4-inch chunks
1 large onion, chopped
1 (10.5 ounce) can cream of mushroom soup
1 (8 ounce) can tomato sauce
1 (1 ounce) package dry onion soup mix
1 tablespoon dried parsley flakes
1 teaspoon ground black pepper

Steps:

  • Combine beef, potatoes, carrots, and onion in a slow cooker crock.
  • Mix cream of mushroom soup, tomato sauce, onion soup mix, parsley, and pepper together in a bowl; pour over the beef mixture.
  • Cook on Low for 6 to 8 hours. Stir before serving.

1 boneless beef chuck roast (2 to 2 1/2 lb), trimmed
1 tablespoon vegetable oil
1 tablespoon Montreal steak grill seasoning
1 teaspoon salt
1 carton (32 oz) Progresso™ beef flavored broth
8 oz white mushrooms, thinly sliced
2 cups thinly sliced yellow onions
1 cup chopped peeled carrots
2 tablespoons Muir Glen™ organic tomato paste (from 6-oz can)
2 tablespoons packed brown sugar
3/4 cup uncooked orzo or rosamarina pasta
1/2 cup shredded Parmesan cheese
1/4 cup thinly sliced fresh basil leaves

Steps:

  • Spray 5-quart slow cooker with cooking spray. Rub beef with oil; sprinkle with grill seasoning and salt. In 12-inch skillet, sear beef over medium heat 3 to 5 minutes on each side, until browned. Transfer beef to slow cooker.
  • In large bowl, mix broth, mushrooms, onions, carrots, tomato paste and brown sugar. Pour mixture over beef in slow cooker. Cover; cook on Low heat setting 7 to 9 hours or until beef is tender.
  • Carefully transfer beef to cutting board; let stand about 5 minutes or until cool enough to handle. Shred beef, discarding any pieces of fat and cartilage.
  • Meanwhile, stir pasta into liquid in slow cooker. Cover; cook on High heat setting 15 to 20 minutes or until pasta is cooked. Stir in beef, and heat through. Serve topped with cheese and basil.

I found this online at www.sparkpeople.com. I made it and was blown away by how yummy it was. I did not add white rice to the recipe, but you can easily get away with many many cups of cooked rice with how much sauce this makes. The onion soup packet is just a reg. sized one. Some say they are 1oz others say 1 1/4 oz. I'm sure either will work. UPDATE: I have since made this with regular cream of mushroom soup and it was wicked salty and tasted completely different for me. I recommend only using the low-fat/fat free kind.

One beef I have with crock pot recipes is sometimes the size of the crock pot isn't included with the recipe. I have an 7 qt. Kitchen Aide Crock Pot, so most recipes will fit into it. With this recipe, I noticed I only filled the crock with these ingredients to the 4 quart line. I got this recipe out of the Simple Vegan Slow Cooker Cookbook. I noticed that the finished soup needed salt, but I don't add salt to my soups. I leave that up to the discretion of the person eating the soup. I used herbs from my garden that I grew and dried last fall. I used white button mushrooms in this soup. I sprinkled a little Romano cheese on top of my bowl of soup, which isn't vegan, but it surely tasted good and added a little extra flavour. I doubled the recipe because we love our soup!
