Slow Cooker BBQ Beef Recipe from Festival Foods, a grocery store in Green Bay. This recipe was featured on the local morning news. I have made this a few times and it is very good. Not too sugary like most bbq in this area. I often don't even add the ketchup, but that is our family's preference.

4 -5 lbs beef chuck roast
1 tablespoon garlic salt
1 tablespoon black pepper
2 cups chicken broth
1 onion, sliced
1 (15 ounce) can tomato sauce
1/4 cup brown sugar
1/4 cup ketchup
3 tablespoons Dijon mustard
1 dash Worcestershire sauce
1 (18 ounce) bottle barbecue sauce (I like KC Masterpiece or Cattlemans for this)

Steps:

  • Season roast with garlic salt and pepper and place in slow cooker. Add all remaining ingredients but the BBQ sauce.
  • Cover and cook on LOW for 9 to 11 hours, until beef is very tender.
  • Shred meat with a fork after cooking and retain 1 cup of the juice from cooking.
  • Add bottle of BBQ sauce.
  • Cover and cook on high for another 45-60 minutes.
  • Serve over split buns with a pasta salad.

1 beef sirloin tip roast (3 pounds), cut into large chunks
3 celery ribs, chopped
1 large onion, chopped
1 medium green pepper, chopped
1 cup ketchup
1 can (6 ounces) tomato paste
1/2 cup packed brown sugar
1/4 cup cider vinegar
3 tablespoon chili powder
2 tablespoons lemon juice
2 tablespoons molasses
2 teaspoons salt
2 teaspoons Worcestershire sauce
1 teaspoon ground mustard
8 to 10 sandwich rolls, split

Steps:

  • Place beef in a 5-qt. slow cooker. Add the celery, onion and green pepper. In a bowl, combine the ketchup, tomato paste, brown sugar, vinegar, chili powder, lemon juice, molasses, salt, Worcestershire sauce and mustard. Pour over beef mixture. Cover and cook on low for 8-9 hours or until meat is tender., Skim fat from cooking juices if necessary. Shred beef. Toast rolls if desired. Use a slotted spoon to serve beef on rolls.

Rinse the chuck roast and pat dry with a paper towel. Drizzle with 1 Tbsp of olive oil. Rub the chuck roast on all sides with 3 Tbsp of barbecue seasoning. Center the roast in the slow cooker. Drizzle the top of the roast with 2 Tbsp of Worcestershire sauce. Cook on low for 7-8 hours until fork tender. Check for doneness at 7 hours using a fork. Remove from the slow cooker and using 2 forks, pull apart the meat, removing all visible fat. Discard the cooking liquid reserving ½ cup. Whisk the reserved cooking liquid with 2 cups of your favorite barbecue sauce. Return the pulled beef to the slow cooker. Drizzle with the sauce. Cook on high for 30 minutes until the sauce is bubbly. Serve on Kaiser rolls with a side of cole slaw.

I found the original recipe on AllRecipes and made a few changes. I especially like to serve this in the summer, when we're in the mood for barbecue and I don't want to be stuck in a hot kitchen. The original recipe calls for a boneless chuck roast, but I've experimented with different cuts of meat and have found that we prefer the eye of round or sirloin tip. The leaner meats allow the roast to cook without diluting the barbecue sauce.
