Our sauce makes a great pizza topper and is the base for three delicious variations served with pasta or rice.

Steps:
- Cut a small "X" in bottom of each tomato. Bring 8 qt. water to a boil in a large stockpot; add tomatoes, and boil 30 to 60 seconds or until peel begins to separate from tomato flesh. Remove with a slotted spoon. Rinse immediately with cold running water, or plunge into ice water to stop the cooking process; drain. Peel tomatoes, and discard skin. Cut tomatoes in half, and gently squeeze to remove seeds. Coarsely chop tomatoes.
- Stir together onions, next 7 ingredients, and chopped tomatoes in a 7-qt. slow cooker. Cover and cook on HIGH 4 to 5 hours or until tomatoes have broken down and are very soft. Cool 20 minutes. Stir in basil and thyme.
- Process mixture with a handheld blender until smooth, or process mixture, in batches, in a food processor or blender. Season with salt and pepper.

Steps:
- Heat a large skillet over medium-high heat and stir in Italian sausage, ground beef, onion, and garlic. Cook and stir until the meat is crumbly, evenly browned, and no longer pink, about 15 minutes. Use a potato masher to mash and blend the meat mixture every few minutes. Drain and discard any excess grease.
- Stir in diced tomatoes, tomato paste, tomato sauce, chicken broth, red wine, Italian seasoning, basil, salt, and black pepper.
- Transfer the sauce to a slow cooker and cook on low for 6 to 8 hours.

Heat the olive oil in a large saucepan or frying pan, add the onions and cook over a low heat until they are very soft. This will take at least 40 minutes – the onions must eventually disappear into the tomato sauce. Some 5 minutes before the end of cooking, add the garlic.
Now add the tomatoes and stir to break them up. Season with sea salt and black pepper. Cook slowly, stirring occasionally, for at least 1½ hours. When the sauce is ready, it will be dark red and extremely thick, with no juice at all, and the oil will have come to the surface. Serve hot.
