HUNAN PORK RECIPE - EASY AND CLASSIC
One of the oldest examples of Hunan cuisine, this delicious pork stir-fry is very easy to make with a few simple and fresh ingredients. Makes a great and quick addition to any meal!

Steps:
- Wash and pat dry the pork belly, cut into thin slices.
- The meat is put into a bowl with cooking wine, light soy sauce, dark soy sauce, oyster sauce, ginger, salt and marinade for 10 minutes.
- Hangzhou pepper is washed and cut on a bias into large pieces.
- Slice the spring onion, garlic cut into small pieces, green onions are cut into small sections.
- Heat up the wok and add the peppers in to slightly stir-fry (without oil)
- Pour the oil in the pan. When the oil is almost at full temperature, add the pork belly and stir-fry.
- Stir fry until the meat begins to curl. Add the peppers, spring onion and toss together.
- Add 1 tsp of steamed fish oyster sauce and continue to stir fry.
- Add minced garlic, chopped green onions, a little sesame oil, stir fry and toss together.

Steps:
- Heat 1 tablespoon oil in a wok or large skillet over medium-high heat until smoking; saute garlic and ginger until fragrant, 30 seconds to 1 minute. Add pork to wok; cook and stir until cooked through, 5 to 7 minutes. Transfer pork to a plate.
- Pour remaining 2 tablespoons oil into the same wok over medium-high heat; saute chile peppers until well-coated with oil and fragrant, about 2 minutes. Add pork to chile peppers and generously season with salt. Cook and stir mixture until peppers are tender, 5 to 7 minutes more. Mix enough soy sauce into pork mixture to add color and taste for desired saltiness.
