Hunan Pork Recipe - Easy And Classic image

One of the oldest examples of Hunan cuisine, this delicious pork stir-fry is very easy to make with a few simple and fresh ingredients. Makes a great and quick addition to any meal!

500 g Pork belly
5 Hangzhou peppers (use generic chili peppers if you can not find Hangzhou peppers)
3 cloves garlic
1 spring onion (You can use green onions instead)
2 green onions
1 tsp steamed fish oyster sauce
1 tsp sesame oil
3 tsp light Soy Sauce
1 tsp dark soy sauce
1 tbsp cooking wine
1 tsp Oyster Sauce
A few small pieces of ginger
Salt to taste

Steps:

  •  Wash and pat dry the pork belly, cut into thin slices.
  • The meat is put into a bowl with cooking wine, light soy sauce, dark soy sauce, oyster sauce, ginger, salt and marinade for 10 minutes.
  • Hangzhou pepper is washed and cut on a bias into large pieces.
  • Slice the spring onion, garlic cut into small pieces, green onions are cut into small sections.
  • Heat up the wok and add the peppers in to slightly stir-fry (without oil)
  • Pour the oil in the pan. When the oil is almost at full temperature, add the pork belly and stir-fry.
  • Stir fry until the meat begins to curl. Add the peppers, spring onion and toss together.
  • Add 1 tsp of steamed fish oyster sauce and continue to stir fry.
  • Add minced garlic, chopped green onions, a little sesame oil, stir fry and toss together.

An authentic, mouth-burning but delicious Hunan recipe served by my grandmother, who was born and grew up in the heart of Hunan province.

Number Of Ingredients 7

3 tablespoons vegetable oil, or more as needed, divided
2 cloves garlic, crushed
1 ounce fresh ginger, minced
1 pound pork tenderloin, sliced into thin strips, or to taste
3 hot long green chile peppers, sliced into thin strips, or more to taste
salt to taste
2 teaspoons soy sauce, or to taste

Steps:

  • Heat 1 tablespoon oil in a wok or large skillet over medium-high heat until smoking; saute garlic and ginger until fragrant, 30 seconds to 1 minute. Add pork to wok; cook and stir until cooked through, 5 to 7 minutes. Transfer pork to a plate.
  • Pour remaining 2 tablespoons oil into the same wok over medium-high heat; saute chile peppers until well-coated with oil and fragrant, about 2 minutes. Add pork to chile peppers and generously season with salt. Cook and stir mixture until peppers are tender, 5 to 7 minutes more. Mix enough soy sauce into pork mixture to add color and taste for desired saltiness.
