12 ounces canned cooked spinach
1 teaspoon salt 
1/2 teaspoon granulated garlic 
1/2 teaspoon ground black pepper 
1/2 teaspoon crushed red pepper 
4 ounces black olives 
1/4 cup corn oil
Six 6-inch rounds pizza dough
12 ounces shredded mozzarella 
4 ounces sliced pepperoni 

Steps:

  • Preheat the oven to 375 degrees F.
  • In a medium bowl, mix the spinach with the salt, garlic, pepper and red pepper. Mix the olives into the spinach. Add 2 tablespoons of the oil and mix well. Cover half of each pizza round with the spinach mixture. Fold the dough over the spinach, making a half-moon shape. Do not pinch the ends. Brush the dough lightly with the remaining 2 tablespoons corn oil. Bake until light golden brown, 15 minutes. Cool slightly (but not totally cold), open the dough to reveal the spinach filling, and then cool completely.
  • Once cooled, spread the mozzarella to cover each entire pie and top each with the pepperoni. Bake open-face until the cheese melts and bubbles, about 10 minutes. Fold back into a half-moon shape, making sure the spinach is on the bottom, and serve.

A drunken fraternity brother taught me this recipe. It's remarkably good. I usually add more Worcestershire sauce, beer and garlic salt during cooking. To fully cook the onions and jalapenos, the burgers will need to be well done. Serve on buns with your favorite condiments.

Yield 4 hamburger patties

Number Of Ingredients 8

1 pound ground beef
½ cup dry bread crumbs
2 tablespoons Worcestershire sauce
½ teaspoon garlic salt
ground black pepper to taste
1 (12 fluid ounce) can or bottle dark beer
½ cup finely chopped onion
1 fresh jalapeno chile pepper, finely chopped

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil grate.
  • In a large bowl, mix together ground beef, dry bread crumbs, Worcestershire sauce, garlic salt, ground black pepper and approximately 1/2 of the dark beer. Mix until firm enough to form patties, using remaining dark beer as necessary.
  • Shape ground beef mixture into 4 thick patties. Create a well in the center of the patties, and fill with onion and jalapeno. Form the ground beef mixture back around the onions and jalapenos, and flatten.
  • Place patties on the prepared grill, and cook 5 minutes per side, or to desired doneness.

I found this recipe in the back of my junk drawer, obviously cut out from a magazine, and I thought the cookies tasted great. It was perfect for me because I try to avoid wheat / gluten. I'm posting the recipe as printed, and it was yummy, but I think next time I will reduce the sugar by at least 1/4 of a cup (maybe more) and add a tsp of vanilla. Added note: I suspect the negative reviewer made these too big. They are very soft for quite a while after coming out of the oven, and I imagine they would never be easy to eat if you made them bigger than they are supposed to be. I use slightly rounded teaspoonfulls of cookie dough and get 2 dozen. Once they cool, they are only a little softer than any normal cookie and are easy to eat. Good luck!
