I threw this sausage recipe together one night to use up produce before going out of town. Who knew it was going to be such a hit! Now it’s a recipe I turn to whenever time is tight. —Elizabeth Kelley, Chicago, Illinois

1 tablespoon olive oil
1 package (12 ounces) fully cooked Italian chicken sausage links, cut into 1-inch pieces
1 large onion, chopped
3 garlic cloves, minced
1/4 teaspoon crushed red pepper flakes
1-1/2 pounds red potatoes (about 5 medium), thinly sliced
1 package (10 ounces) frozen corn
1/4 teaspoon pepper
1-1/4 cups vegetable broth
2 cups fresh baby spinach

Steps:

  • In a 12-in. skillet, heat oil over medium-high heat; saute sausage and onion until onion is tender. Add garlic and pepper flakes; cook and stir 1 minute., Add potatoes, corn, pepper and broth; bring to a boil. Reduce heat to medium; cook, covered, until potatoes are tender, 15-20 minutes. Stir in spinach until wilted.

8 ounces uncooked bow tie pasta (or other shape you prefer)
1 lb fully cooked kielbasa, cut into 1/4-inch slices
2 teaspoons minced garlic
2 tablespoons butter
1 tablespoon cornstarch
1 1/2 cups low-fat milk
1 1/2 cups frozen baby peas
1 cup shredded cheddar cheese

Steps:

  • Cook pasta according to package instructions.
  • In a large skillet, saute over medium heat, the sausage and garlic in butter.
  • Combine cornstarch and low-fat milk until smooth.
  • Gradually add the cornstarch mixture to the skillet.
  • Bring to a boil over medium high heat and cook for 2 minutes, stirring constantly or until thickened. (You may reduce the heat to medium after this comes to a boil to keep from scorching mixture).
  • Drain pasta and add to skillet.
  • Stir in peas and cook over medium heat until they are tender.
  • Reduce heat to medium low, add cheese and cook until cheese is melted.

  • Pour the milk, vegetable oil and sugar into a medium saucepan and stir to combine with a wooden spoon. Heat the mixture over medium heat until it just begins to boil. Immediately remove from the heat and let cool to lukewarm (between 90 ̊ and 110 ̊), about 15 minutes. The mixture will need to be warm enough to be a hospitable environment for the yeast but not so hot that it kills the yeast and makes it inactive. When the mixture is the right temperature, stir in 2 1/2 cups of flour and the yeast. After the yeast and flour are incorporated, add the remaining 2 cups of flour and stir to combine. Cover the pan with a kitchen towel and set aside until the dough doubles in size, about 1 hour. Once the dough has risen, add the baking powder, baking soda and salt and stir until well combined. Pinch off pieces of the dough and roll them into 2-inch balls (about 24). Nestle the rolls into a 12-inch cast-iron skillet, cover with a kitchen towel and set aside until the rolls double in size, about 1 hour. Preheat the oven to 400 ̊.
