BREAD PUDDING FOR ONE – ITINERANT CHEF



Bread Pudding For One – Itinerant Chef image

Use any kind of bread -- gluten free, white, brown, even leftover pancakes or cinnamon buns.

Provided by Valli Arlette

Yield 1 Serving

Number Of Ingredients 8

Butter to grease baking dish
1 Large Egg
1 Tbsp Brown Sugar
1 tsp Vanilla (or other flavoring of choice)
Pinch Salt
1/4 cup Whole milk or Cream
1 generous cup 1/2-inch Bread Cubes
Butter and sugar for topping (if desired)

Steps:

  • Pre-heat toaster oven (or regular oven) to 350°F. Generously butter a ramekin, coffee mug, or heat-proof small bowl with a 2-cup capacity.
  • Using a fork, beat the egg with the brown sugar, vanilla and salt until well combined. Whisk in the milk or cream. Fold in the bread cubes until all are wet.
  • At this point you could add extra ingredients such as chocolate chips or diced apple. See the full blog posting for ideas.
  • Turn the bread mixture into your greased baking vessel. The top may be dotted with butter and sprinkled with sugar if desired. Bake in the pre-heated oven for about 25 minutes, until puffed and golden, and a knife inserted in the centre comes out clean.

Number Of Ingredients 7

1-1/2 cups day-old buttered bread cubes (2 slices)
2 eggs
1 cup milk
1/4 cup sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
Dash salt

Steps:

  • Divide bread between two greased 8-oz. baking dishes; set aside. In a bowl, beat eggs, milk, sugar, cinnamon, nutmeg and salt. Pour over bread. Bake, uncovered, at 350° for 40-45 minutes or until a knife inserted in the center comes out clean. Cool slightly. Serve warm.
