I prefer to make my dogs their own treats so I know exactly what is in them. My dogs go crazy for these simple sweet potato treats.

1 sweet potato
2?½ cups whole wheat flour
¼ cup unsweetened applesauce
2 eggs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Prick sweet potato several times with a fork.
  • Heat sweet potato in a microwave on high until tender, about 6 minutes. Cut potato in half and scoop flesh out of the skin into a bowl; discard skin. Mash potato with a fork or potato masher and transfer about 1 cup to a large bowl. Save any remaining sweet potato for another use.
  • Mix whole wheat flour, applesauce, and eggs in the large bowl with the sweet potato until a dough forms. Turn dough out on a well-floured surface and roll dough to about 1/2-inch thick. Cut out shapes using a cookie cutter or cut dough into strips with a pizza cutter. Arrange cookies on an ungreased baking sheet.
  • Bake until crisp, 35 to 45 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

This recipe was shared with me by a special friend in Atlanta, GA. It has long been a favorite, and everyone who tastes it says it is the best they have ever had.

Yield 1 9-inch pie

Number Of Ingredients 9

1 (1 pound) sweet potato
½ cup butter, softened
1 cup white sugar
½ cup milk
2 eggs
½ teaspoon ground nutmeg
½ teaspoon ground cinnamon
1 teaspoon vanilla extract
1 (9 inch) unbaked pie crust

Steps:

  • Boil sweet potato whole in skin for 40 to 50 minutes, or until done. Run cold water over the sweet potato, and remove the skin.
  • Break apart sweet potato in a bowl. Add butter, and mix well with mixer. Stir in sugar, milk, eggs, nutmeg, cinnamon and vanilla. Beat on medium speed until mixture is smooth. Pour filling into an unbaked pie crust.
  • Bake at 350 degrees F (175 degrees C) for 55 to 60 minutes, or until knife inserted in center comes out clean. Pie will puff up like a souffle, and then will sink down as it cools.

Apparently in the meantime the recipe has been adjusted from "1 large sweet potato" to "1 one-pound sweet potato". Perhaps this will make a difference. In comparing this recipe to other sweet potato pie recipes, I've noticed that most seem to call for 2 cups mashed sweet potatoes.

I made this in a store-bought graham crust which worked fine. This recipe is first cousin to pumpkin pie, except it uses butter in place of condensed milk. [With no added liquid it is a little firmer.] The seasoning is excellent. The total result is OK but buttery-fatty; I'll try a pumpkin pie recipe using steamed sweet potatos as raw material.
