This recipe is too easy to believe! And over the years, I've come up with a few tricks to make it even easier. It's so tasty; your guests will never know how simple it was. Or let kids make it for you! Enjoy!

Total Time 40 minutes

Prep Time 5 minutes

Cook Time 35 minutes

Yield 8-10 pieces

Number Of Ingredients 9

4 cups frozen peaches, mostly thawed
1 frozen pie crust, thawed, rolled out
1/4 teaspoon nutmeg
1/2 teaspoon cinnamon
1/4 cup sugar
4 teaspoons flour
2 teaspoons lemon juice or 2 teaspoons rum
2 ounces milk
parchment paper

Steps:

  • Preheat oven to 375 degrees.
  • Place pie crust on a parment paper lined cookie sheet.
  • Put the remaining ingredients, except the milk, into a large zip-close bag and shake until peaches are coated.
  • "Dump" peach mixture into a mount in the center of the crust and "pat down" so the peaches are about 1 inch from the sides.
  • Fold the lip of the pie crust over the edge of the peaches.
  • Coat the edge of the crust with milk.
  • Bake 35 minutes or until mixture is bubbly and crust is golden brown.
  • Allow to set before serving.
  • (If your crust bakes faster than your peaches, just cover the it with some foil.).

  • Put the flour and butter in a medium mixing bowl. Use your fingertips to quickly incorporate the ingredients to a crumbly consistency. Stir in the water with a fork, then use your hands to feel the dough, pressing it without kneading, to make sure it holds together. Shape into a 1-inch thick square, wrap with plastic and chill for 15 minutes. Preheat the oven to 425°F (220°C) for 20 minutes. Meanwhile, grease and dust a 9”x 9” square fluted tart pan with flour, tapping the sides with the palm of your hand to distribute flour evenly. Shake off and discard excess flour. Grease and flour 2 large pieces of either wax paper or aluminum foil. Place the dough in between and roll it out to 1/16-inch thick. Transfer and lightly press the dough into the tart pan to cover it entirely. Run the rolling pin across the edges of the pan to break off excess dough. Sprinkle the dough lightly with sugar. Layer and overlap the peach slices, creating 3 rows. Cut the leftover peach slices in half into triangles to fill any gap between the peach rows. Sprinkle with sugar. Place the tart on a baking sheet and bake in preheated oven until cooked through and the dough is lightly golden, about 30 minutes. Combine the peach jelly with 1 tablespoon water in a small bowl. Brush the peach glaze on the cooked fruit, being careful not to shift the slices. Return to the oven and bake until lightly caramelized, about 5 minutes more. Let rest for 30 minutes before serving warm or at room temperature.

WHITE PEACH TART RECIPE - MARCO CANORA - FOOD & WINE
"This crust is not what you'd expect," Marco Canora says. "Instead of being crunchy, it's puffy and cakey." The dough is terrific for impromptu baking, because it doesn't need to be chilled before it's rolled out. For the filling, Canora recommends using peaches that are ripe but still firm, as drippy fruit will make the soft crust soggy. More Fruit Desserts
