2 tablespoons 2% milk
2 tablespoons ketchup
1/2 cup soft bread crumbs
1/4 cup chopped onion
2 tablespoons meat loaf seasoning mix
1 pound lean ground beef
Additional ketchup, optional

Steps:

  • In a small bowl, combine the first six ingredients. Crumble beef over mixture and mix well. Shape into a loaf and place in an 8-in. square baking dish coated with cooking spray., Bake, uncovered, at 350° for 40-50 minutes or until no pink remains and a thermometer reads 160°. Serve with additional ketchup if desired.

If you normally reach for leaner ground beef, take this as an opportunity to buy cheaper meat with a higher fat content; this will guard against a finished product that’s dry and brittle. If your family needs a little convincing, remind them that a meat loaf is little more than an oversized meatball or beef burger. They’ll absolutely change their minds, if they give this dish a try.

1 ½ pounds ground beef
1 large egg
1 onion, grated
½ cup flat-leaf parsley, chopped
½ cup bread crumbs
½ cup Parmesan, grated
¼ cup tomato paste
Kosher salt and black pepper

Steps:

  • Combine beef, egg, onion, parsley, bread crumbs, Parmesan, and tomato paste; season with salt and pepper.
  • On a foil-lined baking sheet, form the mixture into an 8-inch loaf. Bake at 400°F until cooked through, 40 to 50 minutes.
