ESPRESSO MARTINI RECIPE - BBC GOOD FOOD
Learn how to make this classic coffee cocktail. Our easy recipe uses freshly brewed espresso, a dash of coffee liqueur and a simple sugar syrup.

Steps:
- Start by making the sugar syrup. Put the caster sugar in a small pan over a medium heat and pour in 50ml water. Stir, and bring to the boil.
- Turn off the heat and allow the mixture to cool. Put 2 martini glasses in the fridge to chill.
- Once the sugar syrup is cold, pour 1 tbsp into a cocktail shaker along with a handful of ice, the vodka, espresso and coffee liqueur. Shake until the outside of the cocktail shaker feels icy cold.
- Strain into the chilled glasses. Garnish each one with coffee beans if you like.

- This is the most underrated vegetable in the whole of the United Kingdom. It's available in every single supermarket, we walk past it all the time, and yet we still take no notice of it. It's an incredible vegetable, it's really good for you and you only need to use 2 or 3 ingredients to bring it to life and blow people's socks off.
- Shave off the celeriac ends and throw them away, then use your knife to peel away the outside skin, cutting away any cracks and crannies as you go. Once you've cut the edge you’ll be able to see the thickness of the skin you need to peel away. Chop the celeriac up into slices, then into rough 1cm cubes.
- Put a casserole-type pan on a medium-high heat and add a lug of olive oil. Rip in the lemon thyme - the smells from this will be outrageous – then go straight in with the diced celeriac and a generous pinch of salt. Turn the heat down to medium, pop the lid on and cook for 20 to 25 minutes, or until tender. Make sure you keep it moving - you want it to fry lightly from the bottom, and kind of steam in its own moisture.
- At this stage, you have two choices. You can either serve it up blonde or you can take the lid off and fry for a further 4 minutes or so, to take the colour much darker. This is such a flexible recipe, you can make it the day before and reheat when you need, or you can blitz it up with some stock for a delicious soup. Give it a try.

- Preheat the oven to 170ºC/325ºF/gas 3.
- Pick and finely chop the thyme and rosemary leaves. Trim, wash and roughly chop the leeks, trim and finely chop the celery, then peel and finely chop the carrots.
- Place a large stew pot on a medium-high heat with the oil and the herbs. Fry for a couple of minutes, then add the chopped veg and cook for a further 8 to 10 minutes, or until softened a little, stirring regularly.
- Add the meat and continue to fry until browned all over and the juices have bubbled away. Stir the flour into the pan, then add the tomato purée, horseradish, stock and bay.
- Bring to the boil, then turn the heat down to low. Crumple up and wet a piece of greaseproof paper, then open it out and place on top of the stew. Cover with a lid and pop in the oven for 2 hours.
- At this stage, remove the greaseproof and skim away any fat from the surface, then top up with 200ml of water. Sprinkle in the lentils, then replace the greaseproof, cover and pop back in the oven for a further 30 minutes, or until the lentils are cooked through.
- When the time’s up, remove the bay leaf and give the stew a good stir to make sure that nothing has stuck to the bottom of the pan. If the stew is a bit thick, add a little boiling water to thin it down. If it’s a bit thin, sit the pot on the hob and simmer gently until the liquid reduces to your desired consistency.
- Taste the stew and season with freshly ground black pepper, if necessary. Delicious served with mashed or baked potato and some lemony dressed greens.
