Healthy Chinese traditional Silkie chicken soup with red-dates, and dried small shitake mushrooms.

Number Of Ingredients 7

1 silkie chicken
3~4 L water
10 to 12 red dates
1 inch root ginger (, smashed )
1 small cup of wolfberry (, optional )
salt (, to taste )
chopped green onion and coriander (, as needed )

Steps:

  • Wash the silkie chicken carefully to remove the impurities.
  • Add chicken in, place ginger, red dates and wolfberries. Load with 4 L water. 
  • Bring the content to a boiling. Remove any floats on the surface (skip this step if you are using a high pressure cooker). Slow durn the fire and simmer for 30 minutes. 
  • Add around 1.5 to 2.5 teaspoon of salt. Serve hot with chopped green onion and coriander as aromatics.

Traditional Chinese belief is ginseng provides many health benefits, so once in a while, I make this Chinese herbal soup with Silkie Chicken and American ginseng. The ginseng can be also replaced with Dong Quai, which is believed to aid recovery postpartum.

Number Of Ingredients 8

6 pieces American ginseng ((or 1 piece of Dong Quai))
15 pieces Astragalus Root
20 small pieces red dates (or 10-12 large ones)
2 tbsp goji berries
1 silkie chicken (See Note 1)
1 large knob of ginger
8 cups water
1 tbsp salt, or to taste

Steps:

  • Parboil the silkie chicken in a large pot, removing right when the water boils. Rinse under cold water to remove excess impurities and set aside.
  • In an Instant Pot or regular slow cooker, add all the ingredients, except for the salt. Slow cook for 8 hours.
  • After 8 hours, add the salt (to taste) and allow the broth to set under the keep warm setting for up to 2 hours.
  • Serve hot/warm and enjoy!

Simmer covered for at least 1.5 hours, up to 2 to 2.5 hours, until the chicken turns very tender and almost falls off the bones. All the ingredients in the soup are edible.
