Sicilian olives are large green olives marinated in herbs; you can substitute Spanish manzanilla olives. Accompany with orzo pasta and Chianti, if you're pouring wine.

Yield 4 servings (serving size: 1 chicken breast half and about 6 tablespoons sauce)

4 (6-ounce) skinless, boneless chicken breast halves
½ teaspoon salt
½ teaspoon black pepper
1 tablespoon olive oil
3 tablespoons all-purpose flour
½ cup dry white wine
½ cup sliced Sicilian olives
¼ cup golden raisins
1 tablespoon balsamic vinegar
1 teaspoon dried oregano
1 (14.5-ounce) can diced no-salt-added tomatoes, undrained
¼ cup chopped fresh basil

Steps:

  • Place each chicken breast half between 2 sheets of heavy-duty plastic wrap; pound each breast half to 1/2-inch thickness using a meat mallet or heavy skillet. Sprinkle both sides of chicken with salt and pepper.
  • Heat oil in a large nonstick skillet over medium-high heat. Place flour in a shallow dish; dredge chicken in flour. Add chicken to pan; cook 3 minutes on each side or until lightly browned. Add wine; cook 1 minute. Add olives and the next 4 ingredients (through tomatoes); bring to a boil. Reduce heat, and simmer 8 minutes or until chicken is done. Sprinkle with basil.

Number Of Ingredients 10

2 pounds flank steak (thinly sliced)
1/2 tsp salt
1/4 tsp pepper
1 cup grated parmesan
1/2 cup grated provolone
1/2 cup Italian breadcrumbs
1/2 tsp garlic powder
1 tsp dried basil
5 Tbsp olive oil
4 cups Tomato Sauce (or your grandmas Italian 'Sunday' Sauce!)

Steps:

  • In a medium sized bowl, mix together the garlic powder, cheeses, breadcrumbs, and dried basil. Set the mix aside
  • Lay the flank steak on a clean surface and pound flat with a meat tenderizer. Sprinkle with the salt and pepper.
  • Evenly distribute the breadcrumb filling among the flank steaks and roll, beginning on the short end, all the way up like a jelly roll. Tie the rolls closed with butchers twine to secure the braciole. 
  • Pour the olive oil into a large pot and heat over medium high heat. Sear the braciole rolls for about 30 second on each side, just to brown the meat quickly. 
  • Add the tomato sauce to the pot and lower the heat to low. Cover and cook the braciole for an hour, basting the rolls occasionally to ensure they do not dry out.
  • Serve hot along with the sauce!

    1. If your meat is not already minced, whiz it up in a food processor to the required consistency and place it in a bowl.
    2. Use the food processor to turn the bread into breadcrumbs, then add to the meat.
    3. Bash up the cumin seeds and dried chilli in a pestle and mortar, and pick and finely chop the rosemary leaves. Add to the mince with the dried oregano and egg yolk. Season well with sea salt and black pepper.
    4. At this stage you could add your optional ingredients (peeling and finely chopping the onion and garlic first, then cooked together gently in 1 tablespoon of oil until tender and allowed to cool).
    5. Mix well, and, with wet hands, roll and pat into meatballs the size and shape you want (cook straight away or put on greaseproof paper and refrigerated for up to a day.)
    6. Preheat the oven to 200°C/400°F/gas 6 and heat a thick-bottomed casserole pan on the hob.
    7. Swirl 4 tablespoons of oil around the pan and add your meatballs. Fry until brown all over, being careful not to break them up.
    8. Turn the heat down and cover with the Basic tomato sauce, pick the basil leaves and tear in fresh basil, tear over the mozzarella and finely grate over the Parmesan.
    9. Cook in the oven for about 15 to 20 minutes, or until the cheese is golden.
